Nether fortresses, mainly because I forgot my old technique of putting torches on one side on my one and only trip there.
I can usually find my way back from Abandoned Minecrafts, but considering those sometimes have torches pre-placed, I can sometimes even get lost in those.
They all are easy to get lost in, but...
Nether fortress. Mainly because every corridor is the same. At least with mineshafts and strongholds, there are some interuptions in the flow of it, and you can remember where you got there from. Nether fortresses are mercilessly repetitive and sometimes hard to navigate
Of the three, I'd say that for me, it's easier to get lost in the Stronghold, as opposed to Mineshafts or the Nether Fortress. The Nether Fortress and the Mineshaft are fairly linear, with very few complex rooms, which makes it easy to use the old "left hand" rule when exploring. The Stronghold, on the other hand, tends to be a little more complex, so it's easier to get turned around in than the others.

I think he means that superflat is infinite sameness (with the exception of villages), and really easy to get lost in.
