Pigs are required because the game wants to be realistic enough and without pigs the farm animal set would not be complete. Besides it is very interesting to ride a pig and they can make good pets!

But pigs ARE more common than cows, if I remember correctly, so you're more likely to find a bunch of them. And if you already have a cattle ranch, just slaughter them for the meat. It's like asking why we have zombies or bats, they're not useful, but they're already there and do have a purpose, albeit not the most useful.
I've already said why bats are useful, but I now have to say why zombies are useful. Zombies are a basic enemy to the game that makes it fun and gives more of a point. Plus they're the ones who drop carrots and potatoes which add variety to your farm so it's not boring. Also for a quick heal if you are dying and only slightly to hungry you can much on rotten flesh! It is cheap and a good temp. healer!
OP is right; pigs do need a purpose. While I'd never agree to voting them out of the game, they do need some more "game" associated with them.
Perhaps they could do something even as simple as attract the attention of hostile mobs. Why would monsters go after a possibly heavily armed human target when there's a big, juicy slab of bacon walking around nearby?
TL:DR, pigs could function as a "bait" animal. And it would be functional/extra hilarious if the pigs know this and run away when chased, going "wee wee wee" with a creeper behind them.

Agreed. Pigs are the most iconic passive mob and they've been stripped of their value. Hopefully Mojang will give them some redeeming factor in 1.6 or else they'll be overshadowed by cows, chickens and horses.

Pigs fit the aura of the game, give nostalgia, etc. Even if they didn't give as much meat as cows, nobody would want to see pigs removed. They have been in for too long. While they don't have better food, and aren't the best to ride, pigs are still part of the game, and don't hurt it at all.
If anything should be removed, it should be bats. They don't do anything, are annoying, don't attack, and overall do not do absolutely anything except make more lag and get people screaming about how pointless they are.

I'm not sure, but my thinking is horses will handle different than pigs. I'm also guessing that horses will be rare in the world and might take more work to get the gear to ride them.

Lava's a better fuel than coal, right? and you don't need coal to get a bucket, so why use coal?
Pigs are more common, not something you'd want to raise, but free wandering food that doesn't fight back and tastes fantastic.
