The answer to this is the same as it has been for every other update in the game's history: when it's ready. The developers don't set themselves a deadline; then they may not be ready in time and would have to choose between either breaking the deadline and releasing it late, or else releasing something on time, that they weren't satisfied with. Instead, they'd prefer to work on it until it's finished, and then release it whenever it is ready. What this means is that, until a couple weeks prior, while they put the final finishing touches on, no one really knows when it will be done, and so they don't know when it will be released. Once they do make it to that final "finishing touches" stage, they will usually release a statement saying that they plan to have it released on such-and-such a date, but even that is just what it says: a plan, not a guarantee. They think they'll have it ready by then, but they don't promise anything. They'd prefer to release an update they are proud of, rather than just release it as soon as possible.
No idea. I think I've read dates around mid May, but wouldn't be surprised if it came later. I'm kind of holding onto my seat, because whenever it happens, I need to update my server immediately. It'll be fun to run around finding and taming horses.
There have only been three snapshots released so far for 1.6 all of which were missing features and had serious bugs, 1.6 is not anywhere near done and they just released 1.5.2 as a bug fix update for the current version.
They will release more snapshots of 1.6 and then depending on how that goes as to how many bugs are found and if any serious bugs are found they will decide whether or not the version is complete enough to be ready for release. That is how they have always done it, that is how they are still doing it...
Mojang will not give a date until they are confidant that the version they already have can be cleaned up for release in a matter of days, we are not anywhere near that stage in the development of 1.6 yet.

Have you looked at your calender lately? It is "mid May" and 1.6 is not anywhere near ready for release yet, there will be more snapshots released before 1.6 is pushed out.

Heard from whom? Mojang has made a point of not saying anything about a release date for 1.6 so you have to be talking about fans just guessing, it didn't come from Mojang anyway.
"Late May" is not going to happen unless they seriously speed things up and release a buggy and unfinished product. Have you played any of the snapshot beta releases? 1.6 is no where near complete in the three snapshots that have been released so far.
