I've been coding and programming since i was 9 and had technology in hand since i could talk.
I think we're on the same page with this mOS. I've made 3 video games so far and i also have made minecraft mods, hacks, and command creations. Hit me up on:

Lots and lots of work. I once (about 20 years ago) wrote a minimal Forth OS for 6502 chips but that had no GUIs or other graphics. Even then it was a nightmare to get it operating correctly and Forth is about as simple as you can get for an OS.
I would think a better route to a look-alike result would be to fake it with an app that put up the appearance and left the real OS intact supporting it.
I reccomend you just repackage a lighweight linux distro. By doing this you can include minecraft and a browser and delete all other applications. If you make a simple GUI you can pretty simply make an OS. I have been looking for one for ages but cant seem to find one :(. I would be down to help you.
A Minecraft OS? That is ridiculous An extensive optimization mod for both client and server would be a better idea. Are you just using the computer for Minecraft? Probably no.
