Back when I first started playing Minecraft the big modpacks were all version 1.2.5, and in most of these packs coal was an extremely valuable resource (for making carbon-based items via IndustrialCraft for example) so I learned to hoard my coal and use charcoal for most of my day-to-day smelting and power generation.
So, even today in vanilla Minecraft 1.7+, I have a tendency to horde/stockpile coal and use charcoal for most basic things.
I don't know about WEIRD... but I find a lot to be desired with how some of these villages spawn (doors covered by gravel/dirt, doors far off the ground). Primitives. I usually dig everyone out and build proper staircases for their homes... gotta bring these guys into the next century, you know?
Some strange habits I have....
1) Hotbar MUST be organized in this manner (From left to right):
-Sword
-Pickaxe
-Food
-Torches
-Bucket (Or Water Buckets)
-Crafting Table
-Axe
-Shovel
2) When I go mining, I ALWAYS avoid mining the three new stone types introduced in 1.8 (Andesite and the other 2), if I have to dig a 30 block long hallway to go around it I will do it.
3) My house is never a house. If you see chests, Crafting table and Furnaces lying around with few brewing stands and other crops in my world or server, that is my house.
4) I never settle down anywhere (i.e. No house is made) until I find a place that meets these requirements:
- It must be a cold biome or somewhere that it snows and water can freeze into ice.
- It must be near an Ocean Monument.
- It must NOT have Jungle or Roofed Forest connected to the biome.
5) Any ore that I see must be mined. Even if I have my inventory full of Coal Blocks I'm going to mine that chunk of Coal Ore.
6) Nothing is to be left on the ground. Even the most useless stuff gets picked up. (Which soon ends up in the cactus or lava.)
There is probably a longer list but I seem to do these every time.

If I have way too much crap in my inventory, instead of putting the stuff in it's respective chests, I usually slam a chest down and shove it all in. I do this quite often, and it is a major contributor to my disorganization.

I post pretty rarely nowadays. Gosh, I wish this place weren't so... empty...
I have this weird habit of clearing out all pockets of Diorite, Andesite and Granite I find while caving or mining. Which makes me jog to my storage room more than I would need to, because of it fills my invetory really fast...
When I pick a spot for a house, I can't just put it anywhere. It needs to be strategically placed near/on a aesthetically pleasing natural structure (ex: Lakes, Cliffs, Trees, and not just any.) Kinda makes survival difficult, cos I can never really find that perfect spot. It really has to be perfect. (My survival style/strategy requires a house to make any real progress, whether it be a shack or a ditch, I need something)
Sword, pick, shovel, axe/bow, and then whatever else I'm using always fills my hotbar. Everywhere inside an artificial structure usually has to be 100% symmetrical. I don't care about the outside, or if the inside is different for a design, but other than that everything has to be the same, especially torches. I spend at least 10 minutes per room figuring out how I will put the torches. They usually are three blocks apart, and one or two blocks off the ground, but I've managed to hide them behind slabs/stairs at least a few times when I didn't have enough space somewhere.[/p]

when falling from a great height I tend to tense up like I'm bracing for impact. Even if I'm falling into water, I'll hold my breath. Also I have an almost absurd obsession in using glass, clay, and sea lanterns in my builds, especially underwater ones. I tend to make these series of connectedness spheres with clay walls and sea lanterns for lighting, all underwater. I keep doing it in each server map I'm on.
I also have to have my hot bar kept in a certain order, my chests hyper organized, the "guts" of red stone mechanisms have to be hidden. Also, even if I'm a desperate newb, I never make a shack. I instead always make these large 2-3 story houses. The ceiling can never be lower than five and despite knowing I'll soon knock out parts of walls for large windows, I'll still complete the wall with blocks before mining them back out for windows.
When building with my friends, I just run around while talking without knowing it and not helping.

I'll make short stories in my head while I play about my minecraft character.

Travel till I have a full set of seeds for every crop... then build a base. OR rarely use a map program to find where I need to go to get them all
