Except it doesn't. As far as I can tell, it'll only break things it is directly touching, and only when it is still. When riding a moving minecart, neither of those requirements are met.
So yeah, they'd make great sentries for a base, with obvious restrictions.
The only thing I would like to see is more experience dropped when it dies. For something that hard to defeat, and even spawn, it should give a lot more than just 20 experience.
Does anyone know how he reacts to water? what if you surrounded an arena area with waterfalls, will he pass through them? will his projectiles pass through? just wondering

Water doesn't affect him in any way. I tried swimming out into some water to see how I'd fare... Badly. Stay out of the water when you fight him. D:
The Wither is in no Way Op because the wither is made as something you do in late game. If he was any weaker he would be the Ender dragon.( weak and unfun to Fight.)
Hmm, a lot of mixed results in this thread. I have to say, I am disappointed by the number of people who probably only read the title, and then came in screaming and saying that everyone other than them was whining. I was expecting a civil conversation here, as is the purpose of a feedback section.
Now, if you've read at all, I stated specifically why I thought the boss was too difficult. Literally, when I was fighting him, all he did was hover above me while blasting me over and over again. I'm not sure if this was a behavior glitch or not, but basically it seemed like something where if you don't have the proper materials, it's impossible, but if you have enchanted diamond armor, it's easy. This does not provide a challange. A challange should be something that takes a large amount of skill to do, and has a chance of killing you, but not something that you have to have brute strength to complete. This is what the boss seems to me right now.
All I really propose here are two things, otherwise it would be too easy:
1. The boss can't break through any block on contact. Thoughtout the thread I see all kinds of cool things involving custom arenas, and these sound like they could be really fun. Sort of provides an ability to do custom PVP matches in singleplayer, but with the wither instead of another player. Unfortunately, all of these are void if the boss can simply break through your arena.
2. The boss sends his heads out slightly slower, or he can send a quick volley of them and then has to cooldown for a second. It seems like, if you're not strong enough, he's just going to wear away at your health slowely, as the heads are extremely hard to dodge, especially when he gets right over your head like I mentioned earlier.
Or, for those out there who do want the boss to be more difficult, there's a compromise: keep him the way he is now in hard mode, change his behavior to what I said in normal mode, and make him even easier in easy mode. After all, the difficulties are there for a reason.

What if Steve acquired glowstone arrows which shrunk and grounded the boss bit by bit after each hit?

Maybe when you defeat the enderdragon, you can aquire the dragon egg, and craft it with normal arrows to get a full stack of dragonglass arrows, which are more powerful than normal arrows, and then you can craft one of those arrows with glowstone to get glowstone arrows, which weaken the wither slightly. Of course, you don't have to use these arrows, so it can still be difficult.
Of course, you could just use the solution I mentioned earlier, i.e, nerfing the boss slightly in easy and normal modes.

I also had the idea that after the Wither is grounded he becomes a skull launching sentry that is stationary. The only way to stop him from shooting those skulls would be to deal melee damage or deflecting a skull. Then, after he has taken enough damage while being grounded, he takes to the skies again.
I'd figure that would make the battle a lot more like a Legend of Zelda boss.

You do realize that the first half of the fight is supposed to be with ranged weapons, right? This is a simplified form of the thought process that should have occurred.
1) So I can't reach it.
2) I need to reach it to kill it.
3) RANGED WEAPONS!
Instead, going by the part I quoted, it looks like you went:
1) Cannot reach the boss.
2) NEEDS TO BE EASIER!
Seriously, judging by the videos I've seen of people fighting the Wither and from a few tests I ran to see how it would go, the Wither isn't unreasonably difficult. Yes, it is more difficult to kill than any other mob in the game but even moderate preparation and creativity seems to make it doable.
