I have to admit, there are times when I give up and scramble the heck back to the surface rather than explore any more. The possibility of mobs jumping out doesn't worry me, like, at all, but I hate getting lost at the bottom of a cave. The two things that help me explore caves the most are A. good armor, and B. lots of signs and torches. If you have full iron armor you can laugh at most mobs' attempts to hurt you. The torches are for lighting everything up so no more can spawn. And the signs are for putting up at every junction to point the way back out.

Honestly I just carry 64 torches, and don't go in until i have a few swords. Also practice combat above ground at night, if you feel confident beating the tar out of your enemy it'll be less terrifying when you get jumped.
That way when 3 skeletons, a spider, and a creeper come for you? You'll be going "HECK YA!" and charging into the fray.
Hardcore mode all the way here. Unfortunately I usually die to lava when digging, because I either used up my bucket of water by dumping it wrong, and didn't go to the surface, or I got lost and forgot that digging UP is bad sometimes at the bottom levels.
Also: Iron Armor: Learn it, live it, love it. You'll be able to survive a point blank creeper blast, at least on normal mode.
The reason behind torching (as I call creating paths of torches) or beaconing (as I call it above ground to mark a trail) is for two reasons. You won't get lost as much, and you'll be able to see what's coming. There's also "claiming" where you block off other entrances in the tunnel, until you're ready to go to them, secure behind you, and torch the area so nothing spawns. It allows you to control what direction your enemies can come from, so you only have to look ahead.
I hope this helps. Usually in Hardcore I don't venture underground until I'm in full iron armor, just to be safe.
Ironically fights are easy for me. It's stupid things that kill me like getting careless and falling. Or swimming in lava in the Nether. Or finding out the hard way that sleeping in a bed in the Nether is a bad idea.
I used to be afraid of caves. Still am if there are lots of spider webs. Not much to do about it other than enjoy it - I mean, what a lucky gift it is to actually be afraid of Minecraftian caves! Once you start to demonstrate mastery over your world, everything is less scary... so enjoy it while it lasts, because feeling is more fun than not feeling.
This thread brings back memories. Went into a cave being scared shitless. Afterwards I came to the surface with half a stack of diamonds.
Now I conquer caves, knowing that mobs spawning in them are ****ing rare ever since the adventure update.

I remember I was armourless once, exploring a ravine. Three creepers jumped down from above, one after another. I survived the first two, but the third one got me - and all three took me by complete surprise.
Stick to the plan. Go in, get the diamonds, get out. If a monster tries to get up in your grill show him whats up. Dont get sidetracked and put down a torch as often as possible. Do this, and you will be fine

It doesn't matter how old you are; some are more sensitive than others.
What actually is it that scares you? How about you turn your brightness & sound all the way up so that you can see & hear everything asap so that it's less of a shock. Or you can just play on peaceful when mining & normal again once you're out of the caves (assuming you don't mind night time mobs).

Hi!, I get scared too. Here is what I do. Dig down, put torches, block it off so nothing can get in, then mine and place torches as you go. You will be alone in the cave as long as you keep the light above 8. Most servers are set to 7 so if you stay above that nothing can spawn. You can check the light level by pressing shift and f3 at the same time. Light level is listed after the code bl. If you open up a cavern and you dont want to go in, just block it, turn and keep mining. Hope this helps. Oh! Get a texture pack that lets you see through blocks so you can see the ore and mobs. Its so cool!

Switch to easy instead of peaceful; mobs will still appear, but they'll be less dangerous (and in a few rare cases, much less dangerous) than in normal mode. Do not hesitate to deck yourself in the best armor you can afford and bring a few back up swords with you so you don't end up running out of swords. Do not underestimate the power of blocks when fighting mobs; a few well placed blocks can create a bottleneck, forcing the mobs to fight you on your terms.
Can't say I feel for you, I play on SMP servers and I build homes deep underground and I never use torches. I like the mobs as company and as a line of defense against unskilled intruders.

What I really do when I explore caves is seal off as much as I can, then light the area I'm in and repeat. Part of this has to do with my habit of playing with sound off. I usually do not notice mobs until they start hurting me if I'm doing something else at the same time (Mining).
Like a lot of people, I used to be terrified of Minecraft monsters. And it took me a long while to ultimately go into a cave not on peaceful. Iron armor, a good sword, bow and arrows are all items that will increase your confidence when venturing in caves. But those items can be difficult to get without venturing into caves to begin with.
What I suggest to overcome your fear is a suicide run into a dark cave. Bring a stone pickaxe, a stone sword, and 10-30 torches. Nothing else. Tell yourself that you will not worry about any of the monsters and that you don't care that they will kill you. Then just run into the cave. Keep running/moving until A. you die or B. you run out of torches. Most likely, you will be surprised by how few monsters you run into. Soon you will run out of torches. At this point, head back the way you came.
