If someone is shooting at you, run around to their side instead of going straight. It's harder to hit a moving target. Then you can land a few hits. Also if you are on low health or running for some reason, use F5 to see behind you. You will be able to run and dodge arrows if necessary. One last tip. If you are under 5 hearts and someone is coming for you... RUN! (unless you have better armor or weapons).
Something that I noticed people saying that doesn't work that good is right and left clicking because you are technically only blocking for a split second. Another tip is put your best stuff like diamonds and anvils (for squashing people and fixing your best gear) in you ender chest. I prefer the guy being on the run because you won't be found easily and raided. I found out that the high ground is sometimes a disadvantage such as when you are on a hill. If you are sniping, have a spot where not a single arrow can hit you. A tip that I discovered is putting stairs sideways and shoot thorough the 0.5 x 0.5 hole. Half slabs doesn't work as good with since there is twice the chance of getting hit then the stair. Although the stairs are good for sniping, you can only aim almost straight.
Something about jumping to get critical hit is that when your are going up, it's a free critical hit for the other player. Also, when you hit someone, they get launched in to the air slightly, allowing you to critical hit them. With the bow, the double critical hit trick, " jump when you shoot " is just a theory that doesn't work. Besides, if you get hit in midair, you will be shot backward in to perhaps a pit of death. If you wait until the bow is pulled all the way, shoot for a critical hit. Release when the screen shows the third animation on the bow. Do it right then for maximum efficiency.
If available i suggest you make the best use of potions. a posion 2 splash potion will leave them near death in just seconds. And a regen potion will keep you alive during a fight for a while as well
To everyone saying that blockhitting doesn't work: It does work, because even if you're blocking for only a split second, there is still a chance they could hit you while you were blocking. It doesn't always work for that reason, but when it does, it's very useful, especially in situations (such as in tight spaces) where you don't have much mobility anyways.
But if you don't like blockhitting, you can try strafing as well; to strafe, all you have to do is circle around your opponent while hiting them, making it much harder to hit you, while still being able to hit them. This really only works in more open spaces, though, unlike blockhitting.
Try to learn to use secondary weapons, such as Flint & Steel, Lava, Fishing Rod, Bow, etc. These can be really helpful, because sometimes you may need more than a sword to kill someone. If you light someone on fire as they're chasing you with lava or F&S, it prevents them from being able to sprint properly, and it also damages them over time, leaving them vulnerable for you to turn around and start killing them.
Now, fishing rods... Some of you may be wondering how these could possibly be helpful in PvP. You can use fishing rods for multiple things: One, to knock your opponent back in water fights (or to knock a teammate towards them). Two, and this is the main reason people occasionally use them: to stun your opponents. Basically what you do is use your fishing rod during a fight to knock the person back, and as they get hit by it, they are stunned for a brief moment, so you can get a free hit off on them. I'd practice this one before using it, as it's a hard technique to learn.
Bows are pretty obvious to know how to use, but I'll go over them anyways. First, they can be used to finish off someone you're chasing if you know for sure they're low enough. Secondly, if someone is charging at you, then you should be able to get a couple shots with a bow, lowering their health before going in with your sword. Keep in mind that a fully charged bow can do up to 5 hearts of damage, so do not underestimate them.
A couple more small tips I can give: Do not jump around too much. Jumping around can give you crits, yes, but it does make you extremely easy to knock around, generally letting your opponents do more damage to you if they're just on the ground.
If it's a survival games server, make sure to have a good chest route on the map you're playing on to maximize the amount of loot you get. If you play on a factions server, make sure to make your base at least a couple thousand blocks from spawn, and be very careful on who you add to your faction. And most importantly.. Don't hack. It's not worth it.

Actually, look straight ahead and sprint while alternating between pressing left and right, for about one second each. Sprinting while looking forward and moving from side to side is the same speed as straight forward sprinting.

Use snowballs to knock enemies back, they also damage armor and are especially useful against the edge of a cliff.
When melee fighting, flank an enemy from the sides, underneath, or the back, and take extreme caution when fighting where he can hit you.

Best stuff for sudden attack.
2x Invisibility Extended potion (Wart, gold carrot, fermented spid eye, redstone) for you, equip at least 3x Splash Poison and a sharpness and knockback sword.
Fire resis is also recommended
Invis: Don't let them see you, have nothing on selected hotbar slot until last second. Equip a spare incase it runs out.
Poison: Throw them from far away, the damage noise is really freaky.
Knockback and sharpness sword: Damage them and deflect them from you.
Fire resis: If you get set on fire you will reveal your location.
Don't use fire aspect or flame or flint and steel, this will reveal your position.

Good tactics and unexpected srategies can easily make you own your opponent.
1. Never use diamond armor unless you really need it, as people can outnymber you and take it. Yes, makes you almost invincible but id recommend iron as it is strong and easier to get than diamond.
2. If you "feel like hacker" or "hawk eye" have the X-ray mod installed. Not only to search for ores, you can easily spot enemies (crouching) or simply hiding in your base. Very useful to me. If the server has anti-xray, use the Redstone finder (press r) to also see them. NEVER tell ANYONE about it or they will ban you. I take no responsibility, use at own risk. Most 1.5 servers dont have anti-xray yet, use as advantage.
3. If you dont feel like cheating... dont cheat
4. If you get killed, and lose your valuable items, bribe stronger guys to get it back. Try not to nag them or them off as they could go against you.
5. Always booby-trap your base with mines, tripwires, dispensers, lava, pitholes, etc. They can't accuse you for PvP traps if you only use them as defensive traps. To lay mines, dig 2 holes down, place TNT with grass/sand ontop, and put pressure plate. Always test traps at singleplayer creative worlds.
6. Never accept /tpa requests from people you don't trust, as they come, they see, n they kick your ass! Only maybe
7. Try to befriend or bribe stronger guys for protection.
8. If enemies prefer to grief their way in to the base instead of knocking on the door, accuse them for griefing. They might get 24 hours ban for it, enough to move your base and prepare defenses.
9. Never have noobs in your faction, as they grief ender chests, enchanting tables, ore blocks, anvils, crafting tables, etc. They also use to accept /tpa requests from stronger guys who hunts for blood.
10. Always hide your base, as far away as possible from spawn to prevent unwanted visitors.
11. Always /lock your chests, furnaces or doors to prevent grief stealing. Also, when finished enchanting, leave your enchant table and anvils back in your chests to prevent stealing. Never share chests with others as one day those diamonds of yours shine so pretty that they cant resist.
12. Try to join strong factions for free materials and protection. If you only demand items, without giving back something or not fight for them, they will most likely kick you, kill you and then rob you.
13. Use all your xp on enchanting, even if theyre weak enchantments, because if you die you lose it.
14. Use looted stuff, even if weaker, give it back for high prices or give them to your friends. If its weaker don't let it just hang around using up your chests.
15. Always jump and left-right click while fighting to prevent crits and xtra damage. Try to trap them and then kill them from a place they cant attack you. Always put your door facing outwards, there is a glitch which allows you to attack through while others cannot.
16. Crouch while sneaking to hide your player name from your preys.
17. Try not to attack people in their bases as you can get outnumbered by faction members or friends.
18. Try to PvP inside your faction's territory as people can't attack you and enemies get -30% attack damage, so avoid other faction bases!
19. Avoid PvP arenas as its easier to fight in the wilderness as you can escape if youre bout to lose and you can dig pitholes or climb treees to get away.
20. If chased, dont look back. If youre on plain areas, you could always press F5 to check.
21. Sneak behind your enemies to find their base without them noticing you. You could booby trap the way/base and ambush them later.
22. Make small shelters here and there with chests so that when you get chased, you can hide there and leave your stuff and later pick it up.
23. As of 1.5, use hoppers to collect items in traps, especially pitholes. Dig them down to layer 15 and make a collect room under the "hit-floor" with hoppers connected to chests.
24. Dont always use your diamond armor unless you really need it as for if someone kills you its gone and they will never give it back nomatter what. Use iron armor, its cheaper than diamond and has average strength.
25. And for gods sake, try not to fall for random pressure plants placed on the ground. If they are connected to traps, you can take the TNT, redstone or the pistons for yourself.
26. Don't waste potions on weak players, save it for stronger fights.

I'm good at PVP. Trust me. Another thing that sometimes helps is if you keep your inventory clean and also what helps is that if you circle them while fighting so you don't charge them, circle them and it might just work.
When your are low on heath you shouldn't run away, this shows the opponent that you are weak and whilst turning around,they may get a few extra hits on you. And when they run either eat if you are hungry or chase after them
