Well, since it's already been bumped, why not throw my two cents in there;
I don't think firearms are appropriate, and I see it suggested a lot. It just doesn't fit, in my opinion. Though I guess I could learn to live with a really primitive single-shot kind of gun. Still pushing it.

Sharks in the water, Random NPCs that come up and attack you (there are mods for those though) and pumpkin pie. If Mojang adds that, people will complain about why aren't there apple pies, why isn't there this or that, etc.
A large boss creature which can be summoned by anyone anywhere so long as they got the ingredients, that re-gens, resists arrows, blows EVERYTHING up, and takes top enchanted diamond stuff to have a chance against....
...All while, again, being able to be spawned 20 meters from spawn cause screw you.
RPG elements (Such as brewing, enchanting, like that etc.) These are the real reasons Minecraft isn't Minecraft anymore.
Brewing and Enchanting are completely optional. If you don't want to do it, you can completely ignore it. Believe it or not, there are plenty of players who rarely use enchantment tables and brewing stands. I've used brewing maybe 5 times in survival, enchanted my picks only when working on a large project that includes clearing out a large area, and enchanted my gear when I wanted to fight a Wither without the risk of it getting loose.
Very few features in Minecraft have been forced on the player. The only examples I can think of are terrain generation changes and hunger. Don't like the End or Nether? Don't bother going there. Don't like enchanting, brewing, or Withers? Don't bother making them.
