It's just depressing. Entire game looks like one of those poorly made, depressive brown and dark green/brown texture packs. Is there any chance of minecraft becoming same old happy green game with new elements? I hope so. Notch has piled up so much stuff, I dont think he mentioned biome colours once
There are biome colors. I hope you're not aiming at getting rainbow grass and trees, but we get birch forests, cold-region pine forests, and regular forests all with different coloration to their leaves. Grass grown in a desert is yellowish brown, and in a cold region has a bluish-green hue. In swamps it's a murky, black green. Water color now changes in biomes too; swamp water looks much darker and murkier than regular water. The wild grasses change depending on biome.
As for the subterranean aspects of the game, it should pretty much all look the same down there. For a game that has only one kind of geological stone (unless you count diamonds and sand/sandstone as stones), you can't expect much subterranean variety, and rock color far below the ground isn't going to change because you're underneath a forest instead of a desert.
We have redstone, lapis lazuli, wool dyes, roses, yellow flowers that I regard as tulips, and many other building materials of varying color. If the colors of nature don't satisfy you, why not paint a better picture, so to speak?

OP has a point, the world is way more gray/brown and depressive than it was.
I would say that the color tones of the foliage is much more realistic that it used to be. The old color scheme was ridiculously vibrant with "radioactive" green trees and grass, back when there was only one kind of tree.
As for a literal interpretation of the complaint, grey is found in bare Stone and Mushroom biome, brown foliage is only found in Desert. You are trying to say that your world is dominated by bare stone, Mushroom, and Desert? I would think that highly unlikely.
It sounds like a "problem" solved with a texture pack.

Personally I'm not a huge fan of the "gritty, more realistic" look. See, to me, the realism argument holds no water in a game where you have to live in constant fear of getting ganked by an exploding hedge monster.
I like the idea of variation in color, but a little less application of the desaturate tool would be nice.
