Simple question.
I'm not quite sure how to approach the task. At first I thought you were supposed to record the entire process then Fast Forward it, but after some thinking, I realized how ludicrously huge the file size would be, especially if its in HD.
Then, I learned of the TimeLapse Mod.
I thought about using that, but I don't know of any good video editors, that can sequence screenshots.
Anyway, is that how it's done?
I'd also appreciate if someone would recommend a (Mac-compatible) video editor that could do that.
A timelapse is made by having someone film you building a massive structure or series of structures usually for several hours, and then editing it to be sped up 5x or so. The person filming can be AFK and it will still work.
EDIT: I'm not sure if it's Mac-compatible, but Fraps is what I use.

Oh, it's not really the recording software I'm looking for; it's the editing software.

yeah it can be done in imovie. separate the clip that you want sped up then hover your mouse over it. a blue thing with a gear will appear at the beginning of the clip. click on it and choose clip adjustments. a mini window will pop up. under the speed pane, bring it to probably around 500% but you can make it any speed it allows.

Use quicktime 7 pro, or imovie to string the multishots together into an image sequence. Theres a tutorial on the timelapse mod thread on how to do it (you don't have to be a good editor).
