If you headed 1 direction on a minecraft map hypothetically, would you end up at the same spot if you kept traveling?

Minecraft is "technically" infinite. It will eventually end when you get to a place called "The Far Lands" with is basically the end of minecraft. To answer you question, minecraft is flat. They are not technically 'the end' of minecraft. It will keep going, it will just become laggier, and glitch most of the time. But you can't get past the farlands, becuase the game will become too laggy and glitchy too play. there is a certiain point on the map in the farlands where, if you try and walk after that point, it'll be so glitchy that you'll just fall through the blocks into the void.
It technically keeps going, but that's about as far as you can go.
Even so, it would take like 800 hours or something crazy like that (off minecraftwiki) to walk there.
It's pretty much infinite ;P

Not really. The Far Lands stretch on infinitely, so you could eventually get up to, say, X:9999999999 Z:999999999. It's just the matter that your game will lag horribly and become almost unplayable once you get to the Far Lands.
The data values used to store the location would theoretically flip if you went far enough. The problem with that is 'far enough' flat out breaks the game engine due to rounding errors from trying to convert a float that size into an int for getting block cords.
Without getting too much into the technical details, the value used to track the overall X,Z position in the game gets less accurate the further away from 0,0 you get. This eventually causes the game to be unable to determine what specific block a player (or point) is actually in causing it to all go wibbly wobbly.
Of course another tactic to figuring the shape of the world is to look at how the sky reacts to moving on the surface of it. Since the sun and stars never change position no matter how far you move in any direction, this would seem to indicate that minecraft actually exists in some kind of 4th dimensional or higher space and trying to think of it in three dimensional terms will just give you a headache.
