We know Steve's height is the average because all skins have the same model. Even female skins. So really, both genders of Minecraftian are the same.
Moving on from height, what about the limbs? Well, both the legs and arms of a Minecraftian are 4px/25cm/10" wide and 12px/75cm/30" long. Again, both measures are larger than those of an adult human male. Considering that the skeletons are most likely those of Minecrafters, and their limbs are 2px/12.5cm/5" wide, the bones alone are larger than a typical human arm. Around those must be a 1px/6.25cm/2.5" thick layer of skin and muscle. That is a lot. This explains the Minecraftian's running endurance and arm strength.
Could a real human punch through a cubic meter of wood with their bare hands? I think not. Or kill a completely healthy other with ten punches to the torso? Also no. And if it takes nine ingots/gems to make a cubic-meter block, that means each one is 1/9th of a cubic meter. Iron, gold, and diamond are all quite heavy, stone is considerably so, and wood is not light either. And the latter two are not in 1/9th cubic meters but in full cubic meters. So, for example, an in-game pick would be as wide, if not wider, and nearly as long as a typical car. And a sword would be incredibly thick-almost clublike, really-and long. One of them could probably crush a small car with little effort.
No wonder Steve is so strong!
However, the Minecraftians need this strength. For both their prey and predators are abnormally tough. Even a lowly pig can withstand a crushing by one of the Steve's monstrous clubs. And the zombies and skeletons are as large and tough as the Minecrafter and are often stronger. Spiders with two-meter legspans prowl in the night, capable of climbing any vertical surface. But deadliest of all is the creeper, roughly 3/4 of the Minecrafter's height and capable of exploding to create a deadly crater multiple meters in diameter.
This is why Notch and Jeb will not add more technology or weapons to Minecraft. He knows that someday a Video-Game Portal Event (VGPE) will occur, as they have in the past (such as the extinction of the dinosaurs by the resonance cascade, and the previous Steve occurrences responsible for folktales of giants, trolls, and ogres). The Minecrafters, as well as the other native species of their homeland, will be able to cause massive damage to the Earth, capable of extinctifying humanity, with only primitive weapons and their supreme strength. Who knows what horrors will unfold unto the earth when they come with machine guns?
Think about it. A Minecrafter could probably kill a human with their bare hands in a few punches. One creeper might take out most of a house, a bridge, or the base of a skyscraper. As stated above, one Minecrafter with a stone club/sword could easily crush a small car. When all the humans are dead, the Minecrafters might take over Earth, or they may be killed off by the other species from their world. Either way, humanity is already weak against these creatures. If they had technology, they would be unstoppable.

I'm a decent Java programmer learning Python, and I'm skilled with server administration, WorldEdit, redstone circuitry, etc. Feel free to show me mod ideas, I'm thinking about starting to make mods, and I'd be happy to give insight as to how a mod could be implemented in Minecraft.
I do doubt adding more technology would create a VGPE and kill us all. For starters, what about all the trained soldiers and weapons we have. I doubt Steve(?) would last against a few dozen trained army men and women and a couple of nukes.
Another thing. If adding more tech to Minecraft would cause said event, what about all the other games that re more advanced?

Also: Steve is 1.8 meters tall, not 2. That's way you can jump a little bit in a place with a 2 meter ceiling.
