Some people say that clay is more rare than diamond. Though in my world I found 8 full stacks of clay in 30 minutes whereas I have only found about 8 diamond. Is my world just clay-rich or are others just clay-deficient?
I would say you may be blessed in the clay department. Everyone says it's rare because the majority experience is scarcity. Most of it is on beaches or shallow water, I fly up high over a very beachy shallowy area seeing several chunks in all directions (and the photoreal texture pack makes it a very distinct color) and I can spot maybe 2 patches each with 10 or 15 blocks total.
If you found 512 blocks of the stuff in 30 minutes easily, your world is made of clay. You're not mistaking it for sandstone, which is common under sand everywhere?
It all depends on the world. Clay is either rare or not rare based on what I've been reading. For me, I've only found a few patches of clay ever since I started playing Minecraft.
The rarity of Clay depends on what seed you have, on the majority Clay's rarity is between Gold and Iron, closer to gold. Some seeds are lucky and get thousands of clay, this is about 20-30% of maps, 10% has clay at the rarity of diamond, and the 60% left is the majority.
It doesn't help much that the default texture makes it look like smooth stone, either. I usually switch to a different texture pack when looking for clay.

Dunno about him, but my info from my old maps was based on statistics gathered by Cartographer. I haven't looked at more recent maps, though.
EDIT: Tested on a 1.4 world:
Clay: 802 (x4= 3208)
Diamond Ore: 9458
Still more rare than diamond (even when considering it drops multiple blocks). BUT - it's concentrated in certain areas, so it's generally easier to find.

You can also make clay while making running water hit gravel, so probably they generated a lot of gravel beachs, but a gap in the water made it flowing, hitting the gravel therefore making clay blocks.
