To me, beds completely defeat the purpose of Minecraft. Why? The main part of the game is surviving nights, fighting zombie hoards and when you die, you spawn a million miles away, losing all your diamonds. That is Minecraft to me. It may be the dark side of it, but it's still a major of part of Minecraft, and to me, it has been removed. You could just go exploring and have night dawn upon you but what stops you from caring a bed with you? It is a portable time changer.
Remember the first time you started Minecraft, you had no idea what was going on. You started smacking trees for wood and you spent your first night in 1x1 hole in the ground. But now people could just kill a sheep, get it's wool and make a bed and SKIP the night.
Again, to me this defeats the purpose of Minecraft.
Let me tell you I haven't used the bed yet in-game and this is just something I thought of before hand. I don't think I'll ever use the bed just for this soul purpose if it is kept in the game.
With this said, I think the bed should be removed or changed.
This is my opinion and you can agree with me or disagree.
Some other suggestions are that could be a LOT harder to craft and wouldn't skip time. Just act as a re-spawn point and maybe heal you a few hearts, not many.

See, the cool thing here is that Multiplayer is where it's at. Single player is cool, but Multiplayer.. I mean come on, that's what we want them to focus on. Singleplayer is fun, don't get me wrong, but ... well, it's not Multiplayer haha.
Anyway, in single player, you do exactly what you're doing if you don't like something... you don't use it. Kind of like playing Oblivion and using mods to turn off the compass or porting all over the map. I get ya dude, beds take something from Minecraft, but then again, it adds something too. You're only human and humans don't like change. The thing is, you don't have to.
Now, on Multiplayer, it's slightly different. It's a must have. Think about it,.. you go home to your house/town/village and you can't get healed.... hum... You need food, but you have one heart left. What to do, go out and fight a pig? Maybe hunt for mushrooms or do some farming? Nah.. I think if it were me I'd want to lie down for a little while and get better.
Yea, so .. bed's aren't bad. They don't "break" the game and they don't prevent you from being attacked by monsters. They're not "crono-triggers" (aka: in Runecraft mod), it's a "time machine". Rather than standing in the dark for ten minuets doing nothing, you can skip the (( DOING NOTHING PART )) and go back to this stuff we call "fun".
Beds are a little easy to make, but only compared to how hard it is to make a bow. Got all this wool, no way to make string? Seriously!?... but, if you throw that card down, someone's going to suggest the sheets be made of spider silk and the whole world jumps on.
Have you seen THIS BULL BUTTER -> British art historian creates world's largest shawl woven from the silk of one million spiders. (google it)
I think I'm fine with the current bed.
Then again.. I think it would be kinda cool if there were stats associated with the construction of the bed. As in..
This would make a bed that you only sleep in.. makes no health regen.

This would make the same bed with up to half health regen.
or or etc
This would make a bed with full regen.
And.. on top of all that, make it change the color of the bed!

If you take a bed with you to avoid night time during traveling it's no different than simply building some dirt around you and sitting the night out while you do dishes in real life.
If you do not put a bed in a safe area, chances are you will be woken up to a zombie beating on you.

Is it really a game changer? Lets see...
The bed certainly can, as the OP points out, completely eliminate the 'Survivor' element of the game.
That said, you can pretty much 'eliminate' that element of the game already, simply by staying in doors and waiting for the sun to come up.
There are times when I don't feel like fighting, all my downtime building and crafting is done, and I don't feel like sitting around for 4-5 mins waiting for the sun to come up. So I see this much more as an element of convenience, not really one of changing the structure of the game. I think there are people that would view the 4-5mins of wasted time, which occurs 4 /5 times every hour, as a real disincentive to play. This one mechanic makes the game more flexible.
Personally, I don't really see the current rendition of "Survivor" as a true Survivor game. Its more of a Nighttime Inconvenience and beware of the Dark game. Real survivor would have daytime enemies as well. But that's a different topic.

I prefer to hide or stick to digging underground during nights. Now that I have the option to skip nights when I want, that's okay too.
