So I say go big or go home. Talk to some other indy communities. Get a big crowd, sell cheap tickets. Sell vendor spots. Book a venue.
Or aim big, realise that you're being way too ambitious, and end up nowhere.
On a parallel, KoLCon, for Kingdom of Loathing, originally started with some twenty or thirty people getting together and talking about the game over a few drinks.
I say start small. Get a sense of everything with a small con. Make sure everyone enjoys themself. Tell everyone to spread the word, and come back next year even stronger.
Metric buttloads of people go to KoLCon now. It's situated consistently in Tempe, and people come in from everywhere. Friends of mine flew in from England to attend.
It doesn't hurt to start small, is all I'm saying.

We have Magfest 9 coming up in January 13-16 2011. If you guys were interested in putting together some kind of minecraft related thing or panel or hosting "minecraftcon" at Magfest, I could totally make that happen. We had about 2200 people out last year, we have a byoc LAN room where we could setup a minecraft server for the weekend (in fact I'd be really surprised if someone wasnt already setting one up). I'm sure we have tons of hardcore minecraft players that are coming out to Magfest this year as well.

Magfest is way less like a convention and more like a party. We are also 24 hours/day so nothing closes.
