I still don't understand what you're doing. It looks like you're taking an image and just stretching out the ends, but I do get the idea of what you're trying to do, and I like it. It looks pretty good zoomed out.
I was just doing this yesterday with a dual monitor display for fun. It sucks with two monitors because the reticule is right on the screen break.
The thing you have to keep in mind with the stretched image is that it would be displayed on two or three monitors and they would be slightly curved around you making it feel much more natural.

The one that got me was someone who was making a texture pack, and ALL the screenshots were at night.
i think a smaller FOV would make it look correct, however on my 3 screens if i position them right then it looks correct for me
