It's boring, there's nothing original to build on. And all it is is just a flat grass land. Booorrriiiing. Why play on them when you have huge gorges, mountains, cliffs, and islands to build on?

Uh, because there aren't any huge gorges, mountains, cliffs and islands to get in the way of your pixel art, mega projects and other assorted awesome things.
Why do I feel as though I've just been trolled?
EDIT: Why do people LIKE vanilla? It's boring, there's no chocolate chunks to nom on. And all it is is just a plain, unextraordinary flavor. Booorrriiiing. Why eat it when you have delicious chocolate, mint, strawberry, and Ben & Jerry's assorted flavors to enjoy?
Flat land is not may favorite, either, but I do like it because it is always easy to build on. It's just more convenient than cooler looking maps, if less interesting.
And did this really need a new thread? You just made one for a very similar topic.
-Tabula Rasa: With a flatgrass, one can spend less time excavating and preparing the land for a structure and more time actually build said structure. Quite an improvement.
-The Great Laboratory: As a corollary of this, flatgrasses are just the right map for experimentation and practices. More of these two will give you inspiration for new builds and constructs, and will also supply you with the experience necessary to build better and more impressive builds.
-What A Massive Plain: Flatgrasses, due to the points above, are the most well-suited for massive projects out of all of the map types.
And there you have it.

That's not really the point. I like excavation and terraforming an environment just as much as the next guy. But it is very inconvenient when building on large scale, and that is something that many people do a lot.

It's a matter of preference.
For example, I really hate flatgrass, as I love building Frank L. Wright type things on the side of cliffs. it may be easier in flatgrass, I enjoy the challenge.
It's just building style, none better then the other.
I like to build on flatgrass because there's nothing that ruins the picture.
You know? Pretend MineCraft is a picture, you don't want your picture to get ruined by something unnatural.
You want it nice and neat, and that's me. I like flatness sometimes depending on the building I am creating.
ecrider's latest project should be enough testimony to why people choose to build on flatgrass. Why wouldn't you like flatgrass? If it is so boring to you go ahead and spice it up by building something nice.
For space, or for experimentation. My best builds have always been on natural landscapes, but when I want to try out new ideas, or just build randomly, I usually do it on flatgrass.
I second Zuriki on surreal maps. They are usually my favorites for building, and the environment can really feed you inspiration.
I only use flatgrasses for big things and experiments. Suffice to say, I think I'm growing to like them more and more. Not hard to see, as my building style is getting more and more grandiose.

IMO, the best maps are the realistic ones; followed shortly by flatgrass. It's very much easier to build large scale stuff that's plain not possible in a random map w/o bunches of terraforming that takes time.
Not many people enjoy manipulating and embracing an uneven terrain.
It's quite the opposite for me.
I love trying to build into or over awkward or impassable terrain.
Yes. For one thing, bridges are stupid on flatgrass. Towns mainly look better on natural. But my server is currently hosting a flatgrass, because they seem to be more popular (except for Chariot's Realistic Landscape)...
