Now I'm not bashing it. This is a great, awesome game... but it's not for single player use. Now before you say something like "This is why Minecraft is a multiplayer game", let me just explain why I wish I never got into it.
Now I love building as much as the next Minecraft fan. My level brings me back to the days I was building in Duke3D's BUILD editor. Such fun I had with that. But anyway, the fun does eventually die. For two reasons.
1. I need help. Constantly. I got so many ideas in my head, but I suck at thinking of a way to execute them all.
2. Griefers. I find it dumb Notch didn't make better measures to combat griefers. Such as a mod that will tell you who built what, and prohibit anyone else from touching it unless given permission to do so. Griefing seems to be so easy in this game, and seems to be more popular than just building, like you're supposed to.
I like playing by myself, and I run a private server. Because my stuff doesn't get touched by griefers seeking to destroy what has taken me weeks, if not months to construct. Yet I know playing by myself means I have to think for myself. Do my own plans. And I can't do them all. Most of my plans desperately need help.
I'm scared to make my server public, just to see griefers come in and destroy everything, and I can't do **** about it because I can't deal with pressure like that. Plus.. my building style is quite... quite different from most, if not all builders in this game. I build realistically, and expect visitors to think the same when they enter my server. And I know I can't have that. I can't just ask anyone to help me then leave so they won't grief and destroy my stuff.
This is why I wish I never gotten into it. The game is awesome.. but maybe it's just not the game for me. Even though I like games like this, and it took me a few months to learn how to do what I have done.
As I said, I run a private server. What sucks is all of my friends don't know about Minecraft, and if they did, are never around to help me. I don't like the idea of maybe having to ask outside help.
Because I know, some of that "help" is going to be griefers coming in and destroying my stuff.
Have a lot of ops, tell them not to be afraid of ip bans, have 5 minute backups, and try to be on while the server is up.
That is how I run my server, and it isn't griefed that much. When it is, I can easily just restore. Sure it means that you lose some work, but you would lose a lot more to the griefer if you DIDN'T backup.
who built what, and prohibit anyone else from touching it
The reason i play minecraft is because anything can be built/destroyed
i want people to destroy part of my building and build something else in it
i want it so it's more like the world is always changing
A. Gain a custom script with map backups and backup everytime a new person comes in.
B. Pick some people from the TOL to add to your server
C. Hire some trustworthy people
D. Have patience, and LOTS of it.
Griefing seems to be more popular than just building, like you're supposed to.
People are more likely to grief you if you whine about how others are playing. I'm not saying you do this, I'm just saying it's not exactly an outlandish assumption.
Also, hire some ops, make backups, use write-protection mods, etc. Seriously, stop whining.

The problem is that most people who are considered griefers don't "build something else in it." 99% of people who destroy any portion of your building will decimate it then move onto another building before being banned.
This is why ops should:
1) Randomly teleport to any person they feel is suspicious after letting them out of a spawn jail every so often, to see what they're doing.
2) Make rounds of teleportation to everyone untrusted in the server to see what they're doing.
3) Immediately IP ban any griefer.
4) Almost automatically teleport to someone who is said to have been griefing, hopefully catching them before they stop, if they were griefing in the first place.

Which have the distinct problem of not being public.
EDIT:
And solving said problem poses a problem, with distribution being frowned upon and all.
