I am building a castle at the moment, as part of a huge build I am doing on a server. so far I have used quite a large amount of stone brick for the build, however for the castle, I'm not sure whether or not to use predominantly stone brick or cobblestone. thoughts?

cobble is more classic, though both get annoying to look at if you make large things with them, so you should try and use a combo of the two, and maybe another block to make it look nice

Personally, I'd use stone brick. Another option is, for large walls, use smoothstone with a stone brick border. Cobblestone never seems to look good however I use it, though, but you might like it. Try it on creative first to see what you like.
I did cobblestone to make it less work but im on survivial so thats just my choice. Stone brick and cobblestone dont look that good but if i had to i would say cobblestone on the outside and smoothstone on the inside so you would have 2 layers and looking good!
When it comes to building medieval things, cobble is my favourite material to build with, though mashing it up with stone bricks can be fun. Maybe if you're making the castle into a city type place, try using more cobble in the poorer places and more stone bricks in the richer places.
Stone Bricks, because they suits to the castle building and redstone torch as torch of the place. but if you're in survival we all know what are we gonna use "Cobblestone" but if you're in creative "Stone Bricks".
Chiseled stone brick looks really nice, but only in moderation.
