Double tap space and then hold space to keep going up. If you double tap again from the air or the ground flying will be turned off. Press shift to go down while flying

Though that method works, I still believe they need to fix it and if you want really good flight controls, (And don't mind installing mods) then get Zombe, it has a completely configurable flight mode. (Not sure if it's out for 1.8 yet though)
