Try using world edit a good way to make a cave with worldedit commands is "//br sphere air 5" this will create a brush you can use to hollow out a cave

Grian also did a video on caves recently, more focused on houses in caves but around the fifteen minute mark is a nice example.

Honestly though, caves are probably a good place to start, as long as you keep it looking natural by making sure there are no obvious squares or spheres they're quite forgiving in what looks good.
If you mean a fake vanilla-looking cave, then just go caving while looking at how they generate. Look at the indentations on the walls, look at the odd imperfections, notice how unnecessarily frequent every stone except stone spawns, etc.

A lot of tutorials for building are found in youtube! I suggest going through caves and have a check on how they all work - entrances, sections, etc.
