I work on building a city when I get bored. You can do lots of things with it and you can keep expanding on it
i can not expand it because its on a plot server where you only have minimal space to build which mine is 100x100 but..a city sounds like a great idea i might try that. thanks for the option

You could try building an airplane, a village, some sort of redstone contraption that is hidden..... Remember, there are many layers to a plot world. You can build something that starts on the bottom, like a section of a city with skyscrapers. Let your imagination go wild, do whatever you feel like doing.

Try building a house that might have been owned by a middle-class person in medieval times. It should look rotted and have moss and vines everywhere. It should have a meandering river in front of it with a collapsed bridge. It should be made with stone brick blocks (mainly). It should be made on the peak of the highest mountain of a mountain range. The mountains shouldn't be too high, and their peaks shouldn't seem too rough. And the river should lead to a waterfall.

I hope I was able to help.
Technically there was no middle class in the medieval times. The feudal system created a very large gap between rich and poor with not much in between
Try some pixel art. You can look up some grids and templates on Google Images or any search engine. Also try making a big mansion, or a giant AFK pool/river! <-- those are always fun...
does anyone have any ideas for me to build in creative mode? it could be anything the plots are huge

Depending on your skills, you can build an aztec city! With the gold pyramids and the colorful huts. I've always wanted to see someone do that.

Parkour labyrinths are fun. They can combine awesome creations with redstone mechanics.
