*DISCLAIMER* I will be focusing on the current negatives and things I wish to be changed, just so you know why only the bad stuff is mentioned here.
Why did you change the craffting interface? It went from simple to complex. Why? Also, out of the 4 modes we had, 3 of which had a reason to be played, you removed one of the 3?
Survival mode - The standard mode of Minecraft, experience the game with a difficulty of your choosing with unlimited lives, allowing for trial and error and an ease of play.
Creative mode - Explore the world with unlimited access to all resources and items, including all monsters and creatures, giving you the ability to build whatever you can dream up and experiment with the rules of Minecraft. The player is invulnerable in this mode and can fly at high speeds and destroy blocks with one hit.
Hardcore mode - Like Survival mode, experience the game only this time you only have one life and are stuck on the hardest difficulty setting. If you die, your world is deleted. This adds extra tension when running low on food and encountering monsters under equipped.
Unless I am mistaken of what you are talking about, I'll try to respond to these. First, do you mean the crafting book? Because you don't need to use that crafting book, and the same 2x2 and 3x3 grids work just fine without it. I like the crafting book because I can type a couple letters into the search bar faster than dragging the items all into the grid for a lot of the more complex recipes.
As for the game modes, as far as I am aware there are 5 game modes for Minecraft, which are the 4 you mentioned and Spectator. And I haven't heard of any of them being removed. Care to elaborate?

Adventure mode isn't supposed to be used in your regular survival world. It's designed for adventure maps.
Maps may want players to be unable to break blocks. Why complete a maze if you can just mine through the walls?
It's not a good challenge. Almost 100% of the game content becomes impossible to access, since you can't even mine wood. It becomes a mindless hunt for items in village chests, which are quite rare. Technically you could find diamonds in desert pyramids, but you couldn't even get to them in adventure mode.
The mode still exists. You can run the command "/gamemode @p adventure" to switch your world to it if you want. I think they removed it from the world creation menu because people were making adventure mode worlds and then wondering why they can't mind blocks.
I suspect they never added hardcore mode on console because the core demographic is young kids who really aren't into that kind of play or may not even fully understand.
Legacy console still has the 'What's This' option, unless they removed it in the last couple updates and I haven't noticed.
The bedrock version, 'Better Together' update, is basically PE, but they are making the bedrock engine version the new face of Minecraft. Despite a brand new codebase written from scratch, its buggy, behind current console version (which is now at parity with java), has a dumbed down redstone system, and from a technical standpoint operates completely different. Most world calculations (crops, trees, mob ai's, etc.) are only processed in a 64 block sphere centered on the player. I could go on and on. But it has the three most asked for things since minecraft hit the 360, infinite worlds, realms, and servers.
There will not be any more updates to the current x-one legacy version, all development stopped as soon as the bedrock update went live. Most aspects of the game work good, observers are frozen in a broken state, but at least they're consistent. World generation is pretty balanced, and the game doesn't crash too often. Compare that with current bedrock and you get huge lag spikes out of nowhere, seeminly infinite waves of mobs at all times of the day, could crash to dashboard at any time, crappy ui, etc., etc.
