I'm sure they're working on a fix, they already know about the problem.
I don't even think they know when the fix is coming out, but it won't be too long.
I hope it doesn't take too long to fix. I just started a new world yesterday, and luckily my initial spawn was next to a plains biome where I have been seeing upwards of 6 or 7 different horses at a time with an occasional donkey in the mix. But until a bug fix is released, I won't try and tame any horses because I don't want to risk losing any saddles or leads.
When ever you leave your horse take the saddle, lead and armor with you,

Good point. Either way though, I'll probably just wait for the update because having to constantly tame a horse and put on and off the saddle is just a chore. Especially when I could just put a saddle on a pig with a carrot on a stick and not worry about it despawning. Granted, the pigs are no where near as fast and maneuverable as horses are, but it's an alternative.
