Start building an amusement park on your map. Designing different working games and puzzles (e.g. connect 4, shooting gallery, bowling) can be a fun challenge in survival. Building something like a realistic looking wooden roller coaster or ferris wheel can also be fun and aren't really too hard on resources (unless you get carried away on the scale). You can also scatter concession stands with villager attendees around your park. If you do a winter-themed park, your snowglobe idea would fit right in.

Interesting... I typed "bored" into an advanced search looking for posts after September 20, 2015 (i.e. one month's worth) and got only 2 - both of them looking for friends to play with. Fess up, you're exaggerating by quite a bit.
A "boredom" plague always seem to hit between updates... some people seem to need to be spoon fed a constant diet of updates to be "satisfied" (if indeed they are satisfiable at all). That said - as a result, there are a number of threads with great build suggestions. One can also check out the "show your creations" section for ideas. Another way to get ideas is to take a walk, cycle or drive around your community... see what different buildings, factories, businesses, etc. are there and see if you can't come up with some great ideas.
How about "models" of some aircraft or even spaceships to decorate your skies or ships in your oceans. Do a rendition of a classic air or sea battle (say, Pearl Harbor or Trafalgar). Expand your transportation corridors (i.e. railroads). Do a classic "trace italienne" fort instead of just a run of a mill castle.
I just recently built my first gold farm. I just flattened the area I have been staying around. I need a few ideas on what to build
and what resources to use. I can do most any block except the condensed ore blocks. I'm saving up for a mega beacon
using my iron, gold and emerald farms. It can be any kind of build though I'd rather not do a castle of stone bricks.
I need a project that can be done while I wait for the farms to fill up and I would like a decent challenge.
So if you have any suggestions please let me know. I will try to get pictures up after I complete it.
Also, I am planning to do a snowglobe of each biome. Any tips anyone can offer would be great because I'm just lost for
motivation.

I like the idea of an amusement park. Built one in creative but never have in survival. With both iron and gold farms it shouldn't
be too difficult to get a nice sized roller coaster. Thanks for the suggestion! I'm gonna need to expand lol! Snow globes and
