I am doing a survival island on the 360, and I've gotten to the point where the only thing left to do is enchant, but I have no leather for books and bookshelves. I have been doing everything I can to get some cows. There are two mushroom islands around mine where I got one cow from but no more are spawning and I need to breed them. Any help?
Not sure what is going on with the mooshrooms, there may be a bug. There are a couple of options for obtaining books/bookshelves.
Librarian villagers sell bookshelves. There probably isn't a village on a survival island map but you can cure zombie villagers and make your own.
Strongholds generally contain a room or two full of bookshelves. Tip for possibly finding the stronghold on an ocean map: use a night vision potion and drive around in a boat while looking at the sea floor. If you see stone bricks then you probably have found the stronghold.

Wait you need cows?
Just get in boat and sail away from your island far enough to get Mobs to spawn. You should get a couple cows in no time.
