You want to get below Y16 since below that level, all the various ores may be found. Above that level, diamonds are not found.
Most lava lakes top out at Y12 on the Xbox, so digging between Y12 and Y16 is less hazardous than digging below that. Personally, I carry a bucket of water with me and mine right at Y12. I encounter lava frequently at my feet, but I can get around this by pouring my bucket of water at my feet as well. The water on the ground will instantly turn any lava I encounter to obsidian. I can also cover a lot of ground quickly when I enounter caves with large lava lakes in the bottom, again just by continually pouring out a bucket of water and picking it back up again. Leaving the water in place when I'm mining ores also prevents the possibility of the drop getting burned up in lava if the block below the ore block I'm mining happens to be lava as the water will flow into the space and instantly turn that lava into obsidian and save the drop.
