Just started playing around with fireworks and they are more complicated than I thought. Anyway, I have read some info and will have another go tonight. What I can't find info on is if there is any way to place a firework with setting it off, and then using redstone to trigger it so that you could effectively set up a firework display and sequence different fireworks to launch at different times. Is this possible and does anyone know any good tutorials on this subject?
Duh, yeah, why didn't I think of that! Sometimes the obvious is the simplest. So I guess if I used a sequence of dispensers with different fireworks in? Or even different fireworks in one dispenser might work? I'll try it, thank you.

Droppers and dispensers are similar-looking containers, that can hold nine stacks of items, and release them one at a time when they receive a redstone signal.
Droppers
Droppers eject items gently, or feed them into an adjacent container such as a chest or hopper. If an item is dropped on the floor, it will be as if the player had dropped them, and they will disappear after 5 minutes.
Dispensers
Dispenser also eject items when triggered, but for many types of item they don't just spit them out, they operate them as if the player had performed a right click.
Projectiles (arrows, eggs, snowballs, splash potions, fireworks etc.) will be fired rather than dropped.
I've also found the in-game fireworks tutorial confusing!? It doesn't explain how to make the charges and the different size fireworks?!

Yes!, the in-game tutorial is quite confusing.
It seems to suggest you make the "rocket" first and add the charge later. In fact, you need to make the charge first and add it to the grid when you craft the rocket.
Changing the flight time requires you to place "individual" stacks of gunpowder (up to 3). Increasing the amount of gunpowder in each stack will allow you to craft multiple fireworks at once. It's pretty intuitive once you get the hang of it.
PS - great tip with the water streams, Dr.Atomic. Gonna see if I can recreate the final scene from V for Vendetta.
No, not a bug, I just tested it, Grace is simply mixing up droppers and dispensers. But he did use a dispenser else the rocket would have simply dropped.

I used droppers in my world. I made an automatic firework machine when it got dark they went off.
