I have a 720p monitor, and it only supports VGA and DVI-D inputs. Currently, I have an HDMI to DVI-D adapter. Will this work for Xbox 360 splitscreen on Minecraft?

It should.... I haven't tested it, but the theory is sound...
I believe that the XBox 360 doesn't take any sort of input from an HDMI cable, so as long as its output is HDMI from the console itself, it should function as normal HDMI output for split screen purposes... regardless of how many video conversions it goes through after the signal leaves the console.
