What is the point of hoppers? I haven't used one. I only play Minecraft on Xbox and PS Vita. From what I see on what other people posts it's for sorting your items? It must be more special then how that sounds since so many people talk about it because I could just sort all the items in my chest too.
A hopper is a god-send. I find it most useful, as Angry Santa said, to automatically put items dropped from a water trough into a chest. It works whether you're there or not, and you don't have to manually put items into that chest anymore. "Items" could be mob drops, produce and seeds from farms, whatever.
Hoppers make most the items farms we have more automatic.
Like the sugarcane farm & melon farms. The hoppers could theoretically transport them into chests when the harvest comes in. If run on a timer it will do it continuously till chest and the hoppers fill up. Also Cactus farm comes to mind as well, since that does not really need redstone by default, but getting the drops to land on the hoppers and chain them to a chest, you will not even have to worry about collecting items.
So item collection gets more automated with this feature. More types of timers are possible like someone else mentioned, and on that same note item sorting.
So basically it helps with the collection process of farms of various kinds, whether you have to replant or not. So the main purpose is item transport & collection, combined with the dropper you can go even upwards in transporting your goods. That is if I remember droppers well enough, I have not messed with those, but have seen them used in other peoples designs.

Yes, this works.... but it seems a bit sluggish/slow, it does eventually get the job done. Droppers (and Dispensers now) can be pointed in any direction (including straight up). Droppers do need to be immediately adjacent to the storage item that they are 'dropping' into. However, the dropper needs to be triggered with a redstone pulse to 'push' the item into the next container as opposed tot he hopper that will push/pull automatically unless a redstone current is applied to it.
So Hoppers are much better for horizontal or downward item transport, droppers can work as an item elevator upward, but is not generally recommended for other directions.

Likewise you can set up a mob trap, and have their drops fall in water leading to a hopper.
It's also handy in some redstone contraptions.
When all else fails, Run around in circles.
