If you are able to play while connected to Live, then you must have the most recent update. Otherwise, there is no direct way, but there is a roundabout one. You can go into the Minecraft folder through the Xbox dashboard and check the date of your update file. Then, you can compare that with the release dates shown in the console version history here:
Got to the help screen while playing, the one that tells you about the stuff in MC from your health, breeding animals and etc. The very first one says Wha'ts New. Choose it and it'll tell you which update/version you are as it shows the updates bug fixes and whats new in the game from that update. Btw we are currently TU16 or TU17 I believe.

You either have the "latest" or you don't (it keeps asking you to 'update').
You either are "current" or you aren't.
If you haven't updated, do so. Then you'll be up to TUXX, the latest one, whatever that is. And that's all that really matters, right?
