In order to open additional trades you simply keep making the right most trade offered until the villager offers his maximum number of trades. Which I think (not 100% sure) is nine. In order to get more villagers you have to add more valid doors to the village. A valid door is a door with one block above it and open to the sky. The rule is 3 doors per villager.
