if your interested, there is a youtube video for a villager farm that is made for organizing up to 100 villagers. It works good for breeding the villagers and is very easy to build, you just need a good amount of wood.
Its measurements are 39x39 overall with a 20 by 20 iron golem farm placed perfectly in the centre. The farm is great for running your own village, and the golem farm in the middle has water in it that pushes the golems into a hole in the centre where they go into a storage area for the player to farm for infinite iron.
I also recommend that you go to the minecraft wiki, which can be found at the top of this website. There you can learn all about villager mechanics.
I just did it. I used a 4x5 block pen 2 blocks high. I lured them in with one block on the outside so they could get in but not out. Then I surrounded it with lots of wooden doors. The ones in the pen were breeding and the ones outside of it were also breeding.
do I need to tear down the walls? or just surround the houses?
you can do either, but most players tear down the walls and put the doors in place that way, so i recommend doing that to avoid unforeseen issues. It takes three doors per a villager in order to breed. So if you want to get a ton of villagers, you need to do a box type area surrounded by doors.
Also keep in mind that villager mechanics can be pretty complicated. If you want Iron golem's to farm or spawn, you will need to remove the current village by removing the doors, and then setting up the proper measurements in your artificial farm. Golems spawn in the village centre which is based on the placement of the doors. One Iron golem will spawn for every 10 villagers, making it possible to get five golem's to spawn in total.
I recommend using youtube as there are very good farms you can find on there that will answer your questions 100%

I want to build an Iron Golem farm.. just to have so when I can transfer my worlds over it will be set up..
sadly i don't have a whole lot of patience with Youtube tutorials haha.. I barely had any when I was watching and building the Enderman Exp Farm, the Blaze Exp Farm, and the Cave Spider Exp Farm

The model i have built is a villager farm capable of managing 100 villagers. It's pretty popular on YouTube and easy to build, it just takes a good amount of wood to make walls and the doors.
For a rough idea of it, The farm is 39x39 (length and width) with a 20x20 isolated section directly in the middle of the farm. The 20x20 part is filled with water that leads to a hole in the centre. This is the village centre where all the golem's will be spawning.
so if you go search Youtube for a villager farm that manages 100 villagers, it should be easy to find and is extremely easy to recreate.
the villagers are not making babies.. I tried placing a juke box next to them.. played I think 5 or six different discs.. and still nothing :/
Again, you might have hit the breeding limit. Otherwise, try making a minecraft track, and have it lead about 100 blocks away from the village. Put two villagers in minecarts and set up your breeder outside of the village boundaries. If they still won't breed, them you've either made the breeder wrong, or have hit the villager limit.

Yes, you most likely have hit the villager limit. If you want to guarantee that you can get the maximum number, you need 150 doors (3 doors per a villager). I have heard that the limit was reduced to around 35, but im not too sure about this as i was able to get 50 villagers on my flatland creative map.

Curse PremiumI have a whole villager breeding system (just built as of TU16) that is producing baby villagers every minute.
So do we. The baby villagers don't just spawn, you need to have the right breeding conditions.
The villager max. limit is 35 so if you have 35 villagers on your map you can not get anymore.
Baby villagers will grow to adults so if you want to have some all the time you have to kill some adult villagers.
You need 3 doors for every villager. Better to have extras.

You could also try curing zmbie villagers.
