Like HellKat said, you can get bows from skeletons. To mine iron, you would have to find tnt (In desert temples) or lure creepers to veins of iron, and blow it up to mine it.
You could also kill the dragon with snowballs, if you can find a shovel.

Even if you don't need it, part of the challenge is collecting the iron. If you don't want the armor, then collect enough iron to make an iron golem.
Like I said before, this is a challenge. You're trying to get to the end in a challening way. Sure, anyone can go to the end with just a bow and kill the dragon. But you said that survival is too easy, so just follow this challenge. I get that you don't need the armor, but make it anyway.

Its not a big deal to add a 'hardcore' mode to game difficulty, which would turn off natural regeneration, and apply a 2x or 4x magnifying effect to mobs hps/damage.
Seriously guys we need to lay off with the 'Go play PC version then' comments, some ideas have merit and not one of us here doesn't have any ideas or things that they would like to see added to the game, be it something brand new, or already existing on the PC version. If you had an idea, or perhaps something negative to vent about the game, and your input is pounded with such comments you wouldn't be all that happy.

The "game" is really as hard or as easy as you want to make it. I'm not against a harder mode (nor am I really against an easier one}... and if they add any in, I'll surely try them all out at one point or another.

I'm actually curious as to how many people realize that there is almost no difference between the difficulties and the Hardcore mode. Hardcore only changes 3 things. If you die your world is deleted, you can't use bonus chests, and the difficulty cannot be changed once you start. That's it.
If people want to play Hardcore in the Xbox 360 Edition, put the game on Hard, don't use a bonus chest, don't change the difficulty, and delete your world if you die. That's it. There is zero reason for 4J to spend time making an arbitrary mode when people can just do it themselves.
I guess people want it because they know once they start playing that they'll give up and either lower the difficulty, use a bonus chest, or not delete their world upon death.

Hardcore mode wont matter for me since i rarely die and its the same difficulty anyway. I want an extreme survival mode where resources are hard to find. 1 tree on the entire map. No bonemeal. Animals drop no meat. 1 wheat seed on the entire map. Make every ore and stone as rare as diamonds. No beds. No enchantment table. No potions except weakness to cure zombie villagers. No food in the villages or chests.
Yes that's why me and my build team are building a very difficult CTM map for xbox. Bigger than ever before. Can test if you like. My gamertag is absentduck1

Fair enough. I agree that survival can get too easy, especially when you get good armor. A challenge mode would make things better (There is another topic on a chellenge mode, that could solve this problem) But I usually have some build project to work on, so the only mob that creates a problem are creepers.

you can play underground. You can only collect resources above ground on the first day then it's all in the dark.
All i have to do is get a sapling and a wheat seed. Everything else is underground anyway.
