As to answer what I think...might be some kind of question...maybe....
Are there a lot of chests, item frames, paintings, boats, or mine carts in the world(s)?
Or are there a lot of animals/hostile mobs jammed into a small space where they are colliding with one another?
These can cause lag...especially if the mobs get out of hand.
In addition to what Phoenix posted, another thing that can cause lag is a lot of redstone "flickering" causing a need for the game to process a lot of lighting changes.

I saw a map where they made a giant glowstone sphere and they could not even join because it could not render the light...

On the 360? I saw that sphere thing for the PC, which makes more sense in the lines of lag.

The entire loaded area is coated in level 15 light during the day...why would one giant sphere cause that much lag?

the reason is that it has to render each section of lighting per block and it's radius. Which causes alot of lag.
Light is precalculated, and doesn't work the way thebaum64 thinks its working. Updates should only occur when and if a block needs an update, such as when a redstone signal is turned on/off and that will not occur if the light level is greater then 7, which is a good way to cut down on redstone lag.
Using MCedit I just tested creating a 20,000 sphere of glowstone on the PC version, and it didn't have any problems handling it at all with no CPU or rendering issues, using version 1.7, though it did take awhile to create the sphere, and several moments to import it.
If I were the op i would check for block updates caused by redstone or pistons. Also large amounts of streams of water and or lava can contribute to lag.
I joined a friend on a brand new world last night and noticed quite a bit a stutter (he would teleport around as long as we were outside).
One thing to remember with MCXBLA is that the host is the server (like COD); thus if you are trying to connect with someone with whom you would normally have a lot of latency (bad connections, distance, etc.) you will still get lag.
SO I HAVE THIS SERVER, WELL ACTUALLY A COUPLE SERVER THAT ARE PRETTY LARGE AND WELL DETAILED
WHENEVER I GOT TO START IT UP AND PLAY IT... THE LAG IS JUST REALLY BAD
AND ALSO RECENTLY I STARTED ANOTHER PROJECT WHERE I WAS BEGINNING TO USE SOME REDSTONE AND STICKY PISTONS, AND IT BEGAN LAGGING REALLY BAD!
IF ANYBODY READS THIS.. COME TO MY SERVER TI SERVER THE PROBLEM.

Now that I think about it...
My economy server does have a gaping pit underneath with tons of monsters...
Maybe that can be it...
