I've been looking for information on the forums here, and have a question I found no solid answer to.
If I build a portal in the nether, quite a ways away from the entrance portal I came in at, will it create a new portal on the overworld side?
I've read posts here talking about multiple overworld portals and their distances/usages into the nether, but haven't seen anything about building portals in the nether itself.
Yes, although I don't know the minimum distance to generate a new overworld portal. This can be useful if your first portal is quite a ways from your nether fortress.
Another consideration about portals is vertical distance. You can build a 'sky' city and put your first portal there then place another portal at ground level or bedrock to easily reach the sky city.
This is also a good way to explore the over world cave systems and ferret out Abandoned Mines. If you build a portal at or near bedrock level in the Nether it will create a portal in the overworld in the nearest open cavern.

This always holds true? I was curious if it simply carved out a 3x5 sized niche in the stone or not. This may be a serious hazard in my current world as it has a vast number of underground ravines with lava bottoms, I would prefer not to have one open in the bottom of these areas and have to build a bridge over the lava!

Simply making a portal and base in the overworld high in the sky, or would the game try to snap fit the portal onto the highest point of nearby ground? Any ideas?
Portals will not generate in solid rock as there is no way for you to exit/enter them. They will always find the next open area to generate in. I suppose it is possible that it could generate on the edge of a lava lake, but I've not seen that happen. It will spawn in dark areas, though, so be ready with a torch and sword.
