I have not played MC360 for the past 2 updates.
Im back now and it seems like the Diamonds are lacking allot now days.
I searched caves for 1 hour in creative mode and only found 4 diamond ore whats up with that?
Probably because the majority of diamonds tend to be around Y12 layer. Just started a TU14 map and haven't noticed any less diamonds on average than other maps/updates
I would say it's probably bad luck. I've generated two copies of the same seed before and after the update and so far, the diamonds are in the same places in both seeds. It is possible that the frequency of diamonds was decreased slightly to accommodate the addition of emerald ore, but I've not found evidence of it..
I'm still having trouble wrapping my head around the "creative mode"/"no diamonds" thing....
I missed that (lol). Although I have done ore counts using creative mode... one just has to be really careful not to go too, too fast so you don't destroy ores before you see them and count them. Another factor here is whether or not the caves the OP was exploring actually went deep enough to get into the diamond layers.
OP: Rather than hunting caves, though, you would get a more accurate impression by stripping several chunks below Y16 and checking to see whether the average is 3.097 diamonds per chunk cleared.
Since diamonds are from level 17 down to bedrock, what I do is to go one of the edges of the map dig down to Y: 15, turn so I'm facing the opposite direction of the edge of the map and start a stripmine 3x3 and after 2 some-odd hours, I'm walking away with 40+ diamond ore blocks to be later struck with my Fortune III pick at my base.
There is 1 diamond ore vein in the bottom chunk. The vein size can consist of between 1 to 8 per vein, which typically results in around 3 diamond ore per chunk, and if fortune 3 is used with good luck could yield up to 12 diamond per chunk.
Something to remember however is that diamond ore can be replaced by lava lakes, structures as well as caves, which could lead to having no diamond ore in said chunk(s). Thus large cave formations that fall into the bottom chunks can actually be departmental to your diamond ore counts.
The xbox minecraft is 55x55 chunks. There are 3.1 average diamonds per chunk. I subtract 25% for levels 1-4 being mostly bedrock and round up slightly to get 6800. That's the number of average(slightly less) diamond ores per map. Keep looking and youll eventually find them!
I`m having the same issue, barely found any in my seed, and have yet to even see emerald ore.
I`ve found only 4 diamond ores, at the bottom of a cave. luckily i have a fortune enchantment.
Going to try branch mining for a few hours, maybe I can get lucky.
We`ll see...

Emeralds are extremely rare, and will only spawn in extreme hills biomes, though sometimes they may spawn in nearby adjacent biomes, but always in the same chunk as an extreme hills. To make matters worse they do not spawn in 'veins' like most other ores, however they can spawn between layers 4 and 32 (bottom 2 chunks), usually avenges about 2 per chunk. They can only replace 'stone' when spawning.
If your after emeralds its best to acquire them through village trading, targeting paper, or meat trades for emeralds. Your actually after a villager whom will offer a paper trade as his last trade, this way when he refuses to trade any further, you can simply close the trade window, wait a minute and trade again using his last trade as it will never 'X' out.

Yeah...they're horribly rare now. Don't bother looking for them. These are simply discoloured Lapis Blocks.
Stay fluffy~
