A labyrinth, maybe? Would take a bit of planning but not many people seem to attempt them, so hey. I've been wanting to make one myself, using leaves blocks or maybe sugar cane for walls and stone paths and with little water pools for decoration. A square or rectangular design would be easiest I suspect. You could build an observation tower in the middle to climb up and look out over the labyrinth and admire your cewl design. (If it's multiplayer world you could get wildly creative and make a puzzle game or a scavanger hunt game out of it.)
Also a glass greenhouse, swimming pool or a reflection pool with greenery and trees around it. This is where I get annoyed with Xbox's limitations because I want all the flowers in the PC version because I'm dying to make a huge, elaborate botanical garden. I can be creative with limited options but yellow flower/red flower/fern patterns only go so far.
Tunnels for minecarts are fun I think, especially if you get creative using glowstone or redstone lamps for lighting.

I have ran out of ideas in Minecraft to build, I have built a house, farm, mine, and all of that basic
stuff. I need to spice up my world a little bit with some very creative ideas. Any feedback will be highly
