From what I've read, nobody's completed it. 1 or 2 has tried, but gave up because it would take too long (they already put in many months of very boring labor). (The console worlds are much bigger than you realize).
You can go for it if you want, but I think you'll have better luck slamming a revolving door.

I found a single diamond block once in a hole surrounded by bedrock on all four sides. Just dumb luck I found it at all. I've also found single blocks of coal the same way, which is weird considering how big coal veins usually are.

Can you find diamonds at the bedrock level? I've found iron and coal and I think redstone just a few blocks above bedrock, but never diamonds.

Yep. I found one parked right on bedrock while digging out the floor of a branch-mining operation.
