Look in the direction you wish to go, then press forward like walking. You can turn and look (like Cobra says) around as you float along, but if you press forward you will change direction in the direction you are facing. Tight turns and sudden movements are difficult. Speed is dangerous as anything you hit will destroy your boat and leave you with some sticks and a few planks (not cool). You can slow down by pulling back on the control stick. Be very careful when doing stuff in your boat. If you are looking at the boat, even a little, you can mine it up by accident (again with the sticks and planks ) If you want to eat a steak or take a swipe at a skeleton, be sure you are looking up and away from your boat. Also note that hostile mobs can destroy your boat out from under you.
I usually switch to third person view when I'm in a boat. (Click left thumbstick). I've found that MUCH easier to control them.
They do just explode for no reason though. I have had them break when I was just cruising along in open water. It would be nice if they would drop a boat instead of a few sticks after they self-destruct.
