From my research, it seems that there are ~16,000 diamond ore in each world available. However, I have also found that there are only ~1600 ore available to actually mine.
So which is it? Can we mine about 16,000 diamond ore, or is it limited to 1600? I know theoretically the ores are about 16,000, but it seems that number drops when logistics are applied.
I know the topic of "how many diamonds" has been overkilled, but I haven't found a clear answer, only both answers. What is the actual amount of diamonds one can mine in a given world on the xbox edition of minecraft?
I guess you will have to wait until that guy finishes mining his whole world.
In all seriousness, there does not appear to be a limit of diamond ores (per the wiki), and you should expect the total number of diamond ore to be different in every seed. In MCXB there are ~2902 chunks, and an average of 3.097 diamond ore/chunk. This gives an average of ~9000 diamond ore/seed. I have not seen additional statistics (e.g., standard deviation) listed anywhere.
You should cite the source of your "research." The Wiki indicates that on average there are about 3.097 diamond ore blocks per chunk.(Source: http://minecraft.gamepedia.com/Diamond_Ore)
Each chunk is 16 x 16 blocks and extend from beddrock to sky limit. An Xbox world has 862 mineable blocks on each side... so this means that there are about 54 chunks on each side or about 2,916 chunks in all in an Xbox world. At 3.097 diamond ore blocks per chunk, this means there are about 9,030 mineable diamond ore blocks in each world.
Now, the actual number of diamonds you could get could be as high as 4 times that (exclusively using Fortune enchanted pickaxes as well as saving and reloading whenever less that 4 diamonds drop per ore block mined (of course, this would be cheating IMO). Still, it does illustrate that a person each sporadically using a Fortune pickage and being very careful not to lose diamonds to lava or by dying should have more than enough diamonds available to them to play the game.
There is a claim made that their is a slightly higher chance to find diamond ore on the limit XB360 world than there is on the more open PC/Java worlds (approximately 4.123 per chunk instead of 3.097 as confirmed in the Minecraft Wiki for the PC/Java version). The person making the calculations assumed the full map size of 1024 blocks by 1024 blocks (64x64 chunks), but the player can only move around in a 864 block by 864 block space (54x54 chunks : with possibly -2 blocks for a 1 block border surrounding this area??? I'm not sure about that part).
Originally, the claim was made that there should be about:

Later it was pointed out that the 'playable' area was actually 864 x 864 blocks (54 x 54 chunks), yielding about:
4.123 x (54 x 54) = 12,022.67 Diamond Ores per map.
if you extract a 1 block border around the perimeter 2x864 + 2x862 = 3452 blocks ~ 13.48 chunks, accounting for approx:
4.123 x 13.48 = 55.6 lost Diamond Ores per map. Or about 12.022.6 - 55.6 = 11,967 total Diamond Ores per map
But this is of course assuming that the claim to there being 4.123 per chunk on an XBox 360 map is accurate, of which I can't find a source backing for certain..... So if we instead used the 3.097 Diamond Ore Blocks per chunk value, we would get:
3.097 x (54 x 54) = 9,030.85 Diamond Ores per map.
...and stripping the border:
3.097 x 13.48 = 29.75 lost Diamond Ores per map. Or about 9,030.85 - 29.75 = 9,001.1 total Diamond Ores per map

I haven't really mined enough whole chunks to completely verify things... but of what whole chunkjs I have mined so far (below Y17), I'm running on average pretty darned close to the 3.097 per chunk stated in the Wiki. There may be some variance among individual seeds and/or perhaps a variance among the various quadrants of a single map, so it seems likely that individual results will vary. I doubt, though, that it gets as small as 1,600 on any map. I think many people just assume that if they no longer see easily visible diamonds in caves that no more diamonds exist in the seed.
This number will of course increase if you use a fortune pick axe too.
