Is it possible for someone on the Xbox 360 to connect to someone on the Xbox One (Through Minecraft of course)?

Extremely unlikely.

XB360 worlds will be different size than XB1 worlds, and the XB1 may allow for more MOB activity and block updates at once, better graphics, etc.

Even MS is keeping the accounts somewhat disjoint.
