Yeh it's not easy on small island maps eh! Good challenge tho.
Got another question, if water damages endermen does the dripping of water through blocks above your head hurt them too?
Just thinking this May be a way of keeping them out of my base without making it 2 blocks high

unfortunately no. That dripping is an animation effect and that is it. It has to have direct skylight for rain to hit/take affect. Pools of water are an exception obviously. This is from my own experience, unless it is something they have changed recently...

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.

Thanks what I was thinking but when it is above lave it appears to make a hissing noise when it drips, think I'll give it a try!! Could be a good deterrent for them
Why is there no endermen when you are looking for them?
Found lava last night and built a few redstone traps but every time I drown a creeper they rarely drop gunpowder :/

I'm not sure, I've never tried to drown them. there could be a conditional on them for drops if died by player hand or not.... but I'm not aware of any conditions like that yet on the 360... PC/Java Version 1.8 is supposed to have a drop condition for Iron Golems, where if not killed by player hand, they will only drop a flower (not iron).
Other than that, I'm not aware of anything special for creeper drops. Maybe it's just bad luck? How many creepers have you killed in this manner?
Well the trap works with water suspended Above sticky pistons in a hallway sort of setup. When the mob comes down the corridor I flip a switch which closes the corridor off at each end and opens the top allowing the now chamber to fill with water and drown the mob.
I have no problem with skeletons and zombies but after 10 or so creepers, still no powder :/
I'll try a crushing trap over the weekend and see what comes out of it.
Or maybe an arrow dispenser trap might work, do they run out of ammo?
Dispensers only have what you put in the them, so yes, they run out of ammo unless you keep reloading them. Of course, if you are killing lots of skeletons, arrows should be in abundance.
How cool are the trip wires!!! But I've found I have to mount them inside the wall as because the mobs keep walking right over the hook and not setting off my trap :/
Think I'll start a new map soon or look for one to join for something different

With as little land as you have, I would think you would be covered up in Endermen.
