Sounds like you mostly got an Ocean Biome...and a few Mushroom Biomes... I have a map like that too. Yes, you will find more interesting things underground, but you can also expand your above ground areas as well by moving the blocks you mine underground up to your surface and building out.
The Red Cows are called 'Mooshrooms', yes, you can kill them for leather, mushrooms, and steak, or you can pen them up and breed them, or you can use a wooden bowl to get an unending source of mushroom stew by 'milking it with the bowl' or you can get milk by using a bucket.
As Greg indicated, it sounds like most of your seed (if not all of it) consists of ocean biome. Mushroom islands do spawn within ocean biomes and they are the islands on which the "red cows" (aka mooshrooms) spawn. Yes, you can kill mooshrooms and they will drop raw beef, just like regular cows. You can also make a wooden bowl and milk them for mushroom stew (which replenishes the food bar as well as steak and has the plus of one mooshroom being able to give you an unending supply of it. You do nee wood to craft the wooden bowl.
The all ocean seeds are commonly known as "survival island" seeds. Surviving in these worlds presents a different sort of challenge than other worlds. One thing you should be aware of is that animals, such as sheep, pigs and chickens will never be obtainable since they do not spawn in ocean biomes. Regular cows also do not spawn in ocean biomes, but mooshrooms can be converted into normal cows simply by shearing them.
Since you won't have any sheep, you will not have a bed (and not be able to set an alternate respawn point) until after you gather enough string from spiders (and abandoned mineshafts) to convert it to 3 wool to fashion a bed. This means that your home base should probably be located near your initial spawn point rather than on the island where you located trees. Be sure to collect the saplings when you cut the trees down so that you can plant trees on the mushroom you spawned on. Also, mycelium will take over dirt, so you will need to isolate your gardens and tree farms from any mycelium (I surround them with wooden walkways).
You may want to spend some time reading on the Wiki and watching "survival island" type videos on YouTube for more info.

Actually, I have a survival island seed from TU7 and there was a swamp biomeislad and got sheep to spawn,and also if you can light your hole island and most islands aren't a pain to light up.i just work through night and day as there is almost no effect(That is, until i got struck by Lightning,So i now sleep through rain)

The key is that the swamp biome was there, even though the amount of land in the biome was small. I once had a survival island seed that had a swamp biome that had no land at all. I could tell it was a swamp biome because of the lily pads floating in that sectionof the ocean. I then constructed land and transplanted grass using a silk touch pickaxe and animals began to spawn in that area. However, IF a survival island seed does truly only consist of ocean biome, no amount of adding land or lighting it will cause animals to spawn there. IF another biome other than ocean (and mushroom) exists, then adding to the land mass and providing grass is sufficient to cause animals to spawn. The sun provides the light, so lighting artificially is not necessary above ground.
Won't grass grow naturally once the land is exposed (in your swamp example)? Do you have to have silk touch to transplant the grass?
In Minecraft, grass doesn't really grow...it spreads from one block to adjacent blocks of dirt. Therefore, you need at least one block of grass to exist on a land mass before it will spread to the other dirt blocks comprising the land mass. If you've created a new island from scratch, I find the only practical way to get a grass block on your new island to start the spreading process is to use a silk touch pickaxe. If you play your odds right (using an enchanting calculator), it usually doesn't take that long or really that much XP before you get lucky and get a silk touch pickaxe (hint: it really doesn't have to be a diamond one).
Alternatively, you can create a dirt "bridge" from an island that already has grass on it... but that usually takes a lot more effort; particularly if the nearest island with some grass is a long ways off.

Thanks! Yeh I have a few islands around the outside I have found, might actually load the seed in creative so I can check out what the map looks like.
I have found sugar cane now also, when I get home from work I'll have a look around more.
This is a really tuff seed compared to a few others I have tried but I kinda like the challenge
And I'm keeping notes of what I find maybe I will put up the coordinates or does that defeat the purpose of a survival map?
Not at all. Good mapping is essential, especially if you make your base away from the spawn point, as the compass becomes useless.
If you have non-Mycelium islands that is a very good thing. You will want to bring some dirt up from the ocean floor, or over from your Mushroom Island and expand those areas to generate land animals and increase your useable land. You are going to be needing food soon, so being able to farm will be a priority.

I have expanded the land at the base of the original mooshroom island and managed to move tree saplings there as I got tired of re spawning there and having nothing at all haha.
The mooshrooms are an awesome source of food!!! The soup is so much easier to get than trying to grow enough wheat to make bread!!
There is no other animals at all I have found in this map, will they spawn if I create enough land?

Animals other than mooshrooms will only spawn in non-Mycelium biomes, so if you expand your land and find that you have a grass or jungle or swamp biome, then yes, sheep, chickens, cows, wolves, etc. will spawn there. Ocelots only spawn in the jungle.
Not sure anyone is aware of this but there is currently a bug that allows Mooshrooms to spawn on mycelium, they are supposed to require 'grass' to spawn on. I think this is why the 360 version will only spawn mooshrooms if there are less then 2 on the map.
Sofar no other biomes other than mycelium and green grass :/ defenately no snow and sofar no desert.
I've started digging today on my island in The north west and have just come across a cave system but I won't be able to explore that until I stock up more torches.

What am I supposed to do with this map!?!?
- some of us look for mob spawners (ex: where do creepers spawn from a certain point).
- some are after the metals like Lapis Luzli or Gold.
- some like to see if the seed is more favorable to a certain biome (ex: snow covering the entire map).
- some are after the towns that generated when Generate Structures is checked
- some may like unique features about the map (a spear)
