When I am doing a diamond speed run, I need to explore dark caves with only a stone pickaxe. Maybe even only a wooden one. And when I'm trying to mine iron, coal, or stone to make a furnace, I sometimes encounter a skeleton. And like 85-90 percent of the time, I die from them. So how can I deal with them when I have only a stone pickaxe?
I appreciate that you may be trying to crowd source ideas.. But it's really not a complicated issue. Make a sword or block off the tunnel they are in and run.
while you make the stone pickaxes (you will need more than one), also make 2 or 3 stone swords, it really only takes 1 or 2 seconds more from your time and helps you alot

I wouldn't bother with trying to 'find' coal right away unless you just happen across it. You should be able to very easily get wood right away (unless it is particularly scarce on you map, in which case you will have a real challenge on a diamond speed run).
Collect Logs and leave as logs unless you need to build something specific (about 25 or so should do to start unless you have a ready vein of coal near by).
Get a wooden pick, a crafting table, and at least about 15 cobblestone, then make a stone furnace:
Put about 10 logs in the top of the furnace and a wooden plank in the bottom to start the fire to make charcoal. Move one charcoal down to cook the rest of the logs, collect whatever is left over... this might be a good time to collect some quick raw meat to cook for later, any pigs/cows/chickens nearby?
Then make a stone pick axe, stone sword, stone shovel.
When the charcoal is done, make some torches and pick up your crafting table. This should help get you by until you find a supply of coal and iron.
Use your terrain when dealing with skeletons, let them come to your around corners, or bob and weave around obstacles if possible, skeletons are more deadly in open areas or from vantage points that are hard to get to. Like when dealing with all archers, you want to close to melee as fast as possible and limit the amount of time then can pick away at you from range.
I don't understand why you 'need' to use stone tools and not carry weapons and armour, unless i'm missing the point. I always tend to go tooled up when underground, and would be more concerned about creepers. Could be worth taking a dog with you though,and a cat. Dogs will go and harass things that attack you and cats will keep creepers away. Take some zombie meat to feed to them too for when they need healing.
The point of a speed run is to get to your goal in a minimal amount of time... that means NOT taking the time to properly prepare...or at the least, preparing minimally. Which means, the only food you gather is on the go, you make quick throw away tools only til you can get the tools you need, and you don't spend the time farming, building up food supplies, armor, pets, a base of operations, etc.

I just build a house... then build a stairway all to level 10 from the house.
Going to that low.. I find diamond a lot. Very quick.
However.. if you want to make it more of an investment... Find all the diamond you can... But don't mine it. Wait until you can get to level 30, build an enchantment table first and bookshelves so you can get level 30 enchantments before you mine more diamond. Because you need to mine the first few you find... Basically just do this.
1. Make a diamond pick with the first 3 diamonds. Use that to to mine obsidian with, enough for an enchantment table.
2. Find a few more diamond because you also need diamond for an enchantment table.
3. Once you make the enchantment table.. invest in sugar cane around your ponds along with some trees because you need bookshelves to make the enchantments better (I'm sure you know this by now I'm just laying out a plan that I always do)
4. Once you have the enchantment table done, and you have the bookshelves around it to make level 30 enchantments, mine other things like coal, redstone, lapus, etc and using other ways to get experience.
5. Once you're level 30, go to the enchantment table and save the game before you enchant. Because what you're looking for is Fortune III and perhaps unbreaking III (and efficiency IV but that's really a just a luxury) but you don't always get that. So what you're going to want to do is in case you don't get what you want... You exit the game WITHOUT SAVING. Then come back into the game, in front of your enchantment table with your level 30 returned and try again. Repeat the process of getting this enchantment until you get Fortune III and Unbreaking III
6. Go and find all that diamond that you saved instead of mined and mine it. You should now get up to 3 diamonds per block mined instead of just 1 with a normal pick axe. With this.. You can have so much diamond you'll need to turn it into blocks to have room.
I had to do that to have enough room.
Now... you CAN do the extra loot per block on other things along with that pick axe.
You can get more of each when you mine:
-Redstone
-Coal
-Lapus

-Gold
-Iron
To make this pickaxe last as long as possible... Use it only on the ones you get the benefit from. If you mine things like Stone, wood, etc.. You're just wasting the pickaxe.
Now... This is very simply to make the mine. From the stairway you make that goes down to level ten.. Just mine wherever. Try make your mine 3-4 blocks tall if you want it to be a slime farm at the same time. Just lay torches everywhere to prevent things like skeletons ever becoming a problem... and I guess Slime seems to come when it's bright a lot.. So when it's bright you get the slime, but not the mobs like zombies, skeletons, and to a lesser extent creepers (because I still see them in my mine). So your problem of wanting to get diamonds fast and not want to worry about skeletons... This will work.
I'm not into the idea saving and reloading to get the enchantment you want. I like to play survival and work for everything, and if i don't get the enchantment i want, then i have to go and slay some beasts to get the xp back. That's just me though...

But if you also have a goal of being decorative then why not? You could use the diamond blocks for decoration.
Another thing I did.. cause liek I said I had so much I had to put it into blocks to have enough room in the diamond chest.

OK, confused over this since diamonds require at least an iron pickaxe to mine.
My suggestion 1) Get a fair supply of wood, make wooden pickaxe and crafting table; 2) Get 13 cobblestone (easy to find, just dig down a few layers right at your feet) and make a furnace, stone pickaxe and stone sword (which only requires 2 cobblestone and a stick); 3) Make charcoal from some of the wood and make torches. (skeleton issue is essentially solved at this point since mobs don't tend to spawn much in tunnels or staircases that are only 1 block wide and lit every 6-10 or even 14 blocks with a torch low on the wall or on the floor). 4) Mine your furnace and crafting table and take it with you. 5) Dig a single-wide staircase (or a 2 x 1 shaft) down to level 12 and when you encounter iron on the way down (and you very most likely will), place your furnace and smelt the iron right away. When you encounter coal (and you definitely will) make more torches. 6) Make an iron pickaxe (and a sword and a bucket if you have enough). 7) When you encounter water, fill the bucket right away (this enables you to turn any lava lakes you encounter at Y12 into obsidian so you can just continue travelling on top of them without having to do much mining and you will probably find loads of diamonds in the walls and next to the lava lakes themselves.
