Maybe I just don't have really high expectations from youtube in general... I'll have to check out those people you recommended, I don't believe I've seen their work before, but I have heard of some of them:

Wow, I can hardly believe you haven't seen anything by these guys. DocM is famous for many things, hes world tours are very entertaining to watch and will inspire anyone who watches them.
Etho, is legendary in the MC community, perhaps one of the most famous MC you-tubers out there, hes invented many many many different things including the mob water elevator, hopper timers, and much more.
TangoTex is a relative newcomer, and has pretty much broken the record on all iron farms out there when he introduced the Iron Trench, and just when we thought it couldn't get any better he introduced the Iron Foundry. He was inducted sometime ago to the ZipCrowd server which is no easy feat, which is where JL2579 and Panda4994 and many others do their work. Tangos LP's are well put together, and very entertaining, slappy the doorman...to slappy the immortal. Recently Tango has moved on to a server that him and impulse runs called Moonlight. Tango also has a new series running called breaking bytes where he makes slight mods to the game for the laughs.
JL2579 and Panda4994 has invented more things then I care to bring up, but include the standard endermen farm, the Iron golem farms that most of us use are (copies) of their work, which was tutorialed by DocM. Overlook did a tutorial based on this as well. JL also gave us sand and gravel generators. In fact the one that Overlooked did a tutorial on is based on JL's design. They do things on a 'massive scale'. One of their farms would pretty much bring a 360 to its knees, and most likely push the xbox one to its limits if and when it arrives for the xbox one. Panda's most recent invention uses 4 kobra's to 'legit' create 4 skeleton spawners by pushing blocks into never loaded chunks and more or less forcing the world to 'create' them based on world generation code.
Its thanks to JL that we know soooo much about mob spawning, and the others at zipcrowd that we know so much about the game. they go into painstakingly details to explain everything to us in their vids. Check out thier zipcrowd server tours, but be sure to duct tape your mouth closed first else you'll be scrapping dirt off your tongue as your jaw will defiantly be on the floor when you start to scope the size and madness of thier farms.
Not much to add to this one, but I enjoy overlookedent, his bam is negligible compared to some of the puerile antics done by most youtubers, docm is also amazing. I tend to split into two types of videos, raw information tutorials, like docm, or overlooked, or I enjoy watching people like bdoubleo100, or keralis, build. They do amazing things and help my eye see things in a new way.
Agreed, very entertaining. Though I tend to agree with Geneo, most videos are really irritating for all the reasons listed. But my biggest YouTube hate of all, is where someone says "watch this vid to see ______ or how to ______ or look at this amazing seed _______" and you watch it to find that actually they don't even show what they set out to do at the start.
It's also really irritating when they are showing you how to build something, but just being generally very clumsy and consistently making a mess of it and faffing about.
Just been to have a quick look at Zip Crowd too, those guys look pretty good.

Sevadus. He also is on twitch. GUY IS AMAZING at building HUGE automated things. He most recently built a building, that has storage for every single stackable item in the game (PC Version). That's not that impressive.. what's impressive is that all you have to do, is walk in, THROW THE OBJECT ON THE GROUND. It will fall into hoppers, then automatically sort itself out. He did this in survival mode too.
Pretty entertaining to listen to also.
