Besides the size limit, can you create the same items in the 360 version as in the PC version? Like house designs, etc? Basically what I mean are there more blueprints in the PC version on what you can create vs the 360 version?
nobody is required to use or follow a blueprint in either MC-PC or MC360.
MC360 is a few versions behind, so it may be lacking a few new blocks (but I've been playing PC 1.7.4 and haven't SEEN anything significant in terms of blocks).
As such, you can place blocks in the same configurations as on the PC. So your question is difficultly worded. If you can build a house in a certain way on the PC version, you can build the same house on the Xbox version.
At worst, you might be missing a block-type to use, but you can substitute it for a placeholder.
In the missing block types area, general building blocks are mostly caught up (though PC has new types of wood).
It's the redstone and decorations area where the PC version has new stuff. Command blocks, hoppers, carpet. None of these things are required to duplicate a house design from the PC.
Nether Quartz, Emerald Ore, Block of Emerald, Beacon, sideways logs, all-bark logs are not in the 360 version either...although we are expecting a number of these in the next TU.
I haven't played PC version but a friend has and he told me a little about the blueprint feature on PC version. We don't have that on console at all, though one hopes that next gen MC will.
There are more crafting table 'recipes' in PC than there is on the consoles... as to a 'blueprint' feature, that sounds like a non-standard user created Mod. I've seen Mods that let you copy building and such, but I don't think that anything like that will be coming to the consoles anytime in the near future, though.
