I recently purchased Minecraft for Xbox 360 and am still learning the ropes, so to speak. I would like to build a sliding gate using some cobblestone blocks and a sticky piston, but I don't know where to find redstone.
Also, I found gold ore, but wasn't able to mine it with my stone pickaxe. What kind of pickaxe do you need to mine it?
You need an iron pick to mine gold. You find redstone deep underground (I'm not sure exactly how far down). And I don't know where to find dimond but you find diamond at y=16 or lower.
Strip mining or branch mining around Y:15 is usually a good way to find just about anything. This is where diamonds tend to be, and I usually find plenty of gold, iron, redstone, and coal along the way. In order to mine redstone, gold, or diamonds, you need an iron pickaxe.

So i don't get you miners only working level 12. Water and blocks work on the lowest levels too and once in the Nether with fire resist potions you can swim in lava.
Presuming you don't have, nor want to frequently use, fire resist potions, water flows better downward, and so does lava. If you start above it, it won't drop on your head and you can easily douse it with water and collect the obsidian from it, while starting below the lava risks having it drop on your head when you aren't prepared for it and you have to work with throwing water at it from below or at the sides, which isn't as easy nor as effective.
I like to find 100% of ore and mine at several y positions. usually take the following layout: http://minecraft.gam...d_Branch_Mining
(The one picture to the right with the stairs. Mine 1x2, leave 3x2 free, next 1x2 shaft. Next layer shifted by two blocks up and to the left. It has the chance to miss lonely ores a the lowest levels, but that's it.)

If I'm interested in clearing an area of essentially all ores below Level 12, I start at Level 12 and work my way downward, mining always thorugh a layer of water. That way, if the ore happens to be sitting over a pool of lava below it, the water I pour above/around it instantly turns the lava into obsidian and the drop is not accidentally consumed by the lava. However, attempting to clear all the ores is a rather inefficient way of mining; it's far more time effective to shoot for clearing a high percentage of the ores. If will usually only attempt to completely "strip" an area of ores IF I'm also planning some sort of underground build in that location.
If you're using a branch mining technique, this involves making tunnels only 5 or 6 blocks apart (as opposed to every second or third block that people seem to do). Due to the way that many ores spawn in groups/veins of 4 to 8 blocks, you are very likely to encounter most of the blocks of ores in this way and you're not wasting so much time clearing away stone.
If you start mining at level 12 and work your way downward, you will also be able to pinpoint the location of the larger lava lakes. Dropping some gravel into various areas of those lakes (as you turn the topmost layer into obsidian in order to walk over it will enable you to determine the depth of the lake and decide whether or not it is even worth trying to dig down any farther in that area (since some of the lakes at level 12 go right to bedrock over some very large areas. If there is no lava encountered at level 12, there is a strong chance that the area will not contain much lava right to bedrock and, therefore, have more ores available for mining at the lower levels without worrying about having lava dump on your head or having to clear away too much obsidian.
There are actually so large a number of ores (even over 9,000 diamonds) available in the world that I find it often only necessary to do much mining right at Level 12... particularly if you manage to enchant a "fortune" pickaxe.
To find diamonds I usually branch mine at level y-10. I go down one path that is 4 blocks high, that way I check y-10, y-11, y-12, y-13, and see the bottom of y-14. Then, after you have went down the same path for sometime, Then go 3 blocks over, and mine back the other way. This is your best bet at finding diamonds.
