Easiest way I can think of would be to create a new profile. But then again, if you want to play online, you'd have to start a new Live subscription...
Clear the cache, it will reset your stats.
May take a while for the leaderboards to update but that's how I used to do in the past.
Please note that after clearing the cache, you'll be required to download the latest patches for all of your games again when playing on Xbox LIVE.
